Ingredients for Linzer Cookies:

  • Almonds grinded 1/2 cup
  • Flour 1 cup
  • Granulated sugar 4 tbsp
  • Salt pinch
  • Butter 4 ounces
  • Strawberry jam 4 tbsp
  • Icing sugar to dust
  • Vanilla essence 1/2 tsp

Method:

  1. First heat oven to 180 degree C.
  2. Then put almonds, flour, sugar, salt, butter and vanilla essence in food processor and mix until it becomes creamy.
  3. Then fold into plastic bag and chill for 30 minutes.
  4. Now roll dough 1/4 inch and cut with any cookie cutter.
  5. Then paste cut pieces on baking sheet and make hole in center.
  6. Now bake it for 10 minutes.
  7. Then fill cookies with jam in center and make sandwiches.
  8. Now put cherries and dust with icing sugar.

Ingredients for Beninese Pocket:

For Pocket:

  • Flour  2 1/2 cups
  • Butter  6 ounces
  • Egg  1
  • Egg white  1
  • Granulated sugar  2 tbsp
  • Caster sugar  4 tbsp

For Filling:

  • Chopped glazed cherries  1/2 cup
  • Almonds and pistachio  1/2 cup
  • Chocolate chips  1/4 cup
  • Butter  2 tbsp
  • Caster sugar  2 tbsp

Method:

  1. Line baking sheet with butter paper.
  2. Now put chopped glazed cherries, almonds, pistachio, chocolate chips, butter and caster sugar in one bowl and mix it.
  3. Then mix flour, butter, egg, egg white, sugar and caster sugar, make dough and cool for 30 minutes.
  4. Now roll dough, cut into square pieces of two inches, fill it, roll it, brush with egg white and sprinkle caster sugar.
  5. Brush it with egg and sprinkle the caster sugar.
  6. Then bake for 20 minutes.
  7. Now take it out in wire rack, cool it and keep in air tight condenser.

Ingredients for White Chocolate & Orange Cookie:

  • Butter 4 ounces
  • Caster sugar 3/4 cup
  • Egg 1
  • Orange zest 1 tbsp
  • Vanilla 1 tbsp
  • Flour 1-1/2 cup
  • Baking soda 1/2 tsp
  • Baking powder 1/4 tsp
  • Salt 1/4 tsp
  • White chocolate chips 1 cup

Ingredients:

  1. Heat oven to 180 degree C.
  2. Now mix butter and icing sugar and beat until it becomes creamy.
  3. Then put egg, orange zest and vanilla essence and mix it.
  4. After that, strain flour. baking soda, baking powder and salt and put in creamy mixture.
  5. Now mix white chocolate chips and make balls.
  6. Then keep on non stick baking sheet, bake for 10 to 12 minutes, chill it and keep in condenser.
