Mutton Liver In Garlic & Black Pepper, Beef With Baby Onions And Corn Chowder by Chef Zakir

Ingredients For Beef with Baby Onions:

  • Beef undercut 1/2 kg
  • Capsicum 1
  • Garlic 3-4 tbsp
  • Oil 3-4 tbsp
  • Turmeric 1/2 tsp
  • Cumin powder  1/2 tsp
  • Coriander powder 1/2 tsp
  • Chili powder 1/2 tsp
  • Dry ginger powder 1/2 tsp
  • Crushed red pepper 1 tsp
  • Baby onion 3-4
  • Coconut milk 1/4 cup
  • Soya sauce 1 tbsp
  • Desiccated coconut  1 tbsp
  • Worcester sauce 1 tbsp
  • Salt  to taste

Method:

  1. First pour oil in a pan, add chopped garlic, beef slices, fry it well dry its water, till it turns to brown color.
  2. After that add capsicum, cumin powder, chopped red chilies, coconut milk, soya sauce, worcester sauce, chopped coconut, chopped coriander, chopped red chilies, chopped cumin, turmeric, mix it well cover and let it cook for 4 to 5 minutes to cook.
  3. Now put some few drops of oil, baby onion, make two pieces fry it well.
  4. Then put the fried onion, into beef pan mix it well then serve it hot.

Ingredients For Corn Chowder:

  • Vegetable stock 1 to 1-1/2 cup
  • Broccoli 1 small
  • Sweet corn 1/2 cup
  • Cheddar cheese 50 gm
  • Salt to taste
  • Black pepper powder  1/4 tsp
  • Coriander leaves  as required

Method:

  1. First pour oil, put small onions, capsicum, chopped garlic, potato fry it for 3 to 4 minutes.
  2. Then add milk, vegetables stock, let it be on simmer, so that it becomes soft.
  3. Then cover it for 10 to 12 minutes remove its cover then let it put on simmer, add chopped broccoli, sweet corn.
  4. Along roasted flour, so that the gravy becomes thick.
  5. Then add cheddar cheese, salt, chopped black pepper mix it well.
  6. In the end take it out in a serving dish, sprinkle green coriander then serve.

Ingredients For Mutton Liver In Garlic & Black Pepper:

  • Mutton liver 1/2 kg
  • Lemon juice 2 tbsp
  • Oil 2-3 tbsp
  • Garlic chopped  4-5
  • Coriander leaves 1/4 bunch
  • Crushed black pepper 1 tbsp
  • Worcester sauce  2 tbsp
  • Oyster sauce  1 tbsp
  • Chili garlic sauce 2 tbsp
  • Fresh red chilies 2-3
  • Chili powder  1/2 tsp
  • Salt  to taste

Method:

  1. First cut the mutton into thick slices, pour lemon and keep it on a side.
  2. Now pour oil add kalonji, fry and take it out.
  3. Then pour oil, add chopped garlic.
  4. Now add chopped black pepper, chopped red chilies, oyster sauce, worcester sauce, chopped green coriander, mix it for 1 to 2 minutes.
  5. Add fresh red chilies, kalonji mix it well then serve.
