Dry Beef Pepper, Sabzi Masala And Malai Tikka by Chef Zakir

Ingredients For Sabzi Masala:

  • Cauliflower 1/4 piece
  • Green gourd 2
  • Ridge gourd 1
  • Potatoes 2
  • Carrot  1
  • Tomatoes 4
  • Onion 1
  • Ginger garlic paste 2 tbsp
  • Coriander leaves  1/4 bunch
  • Green  chilies 4-5
  • Ginger  1 piece
  • Yogurt 125 gm
  • Crushed red pepper 1 tbsp
  • Turmeric  1 tsp
  • Cumin powder 1 tsp
  • Coriander powder 1 tsp
  • All spice powder 1 tsp
  • Salt  to taste
  • Oil  1/4 cup

Method:

  1. First add cauliflower, ridge gourd, green gourd, potato, carrot, tomatoes, onion and green chilies cut it into small pieces.
  2. Now pour oil add ginger garlic paste.
  3. When it becomes paste, add yogurt, chopped red chilies, turmeric, chopped cumin, chopped garam masala, chopped coriander and salt mix it for 1 to 2 minutes.
  4. Then add vegetables, green coriander, ginger, water mix it cover and let it cook.
  5. Add vegetables tender the chicken for 10 to 12 minutes for roasting then serve it hot.

Ingredients For Malai Tikka:

  • Chicken boneless 1/2 kg
  • Green chilies  8-10
  • Ginger garlic paste 2 tbsp
  • Fresh cream  1/2 cup
  • Thick yogurt  125 gm
  • Cumin powder 1/2 tsp
  • Black pepper powder 1/2 tsp
  • Salt  to taste
  • Oil  3 tbsp
  • Coal  as required

Method:

  1. First add chicken cubes.
  2. Now add ginger garlic paste, take out the water from yogurt, chopped cumin, chopped black pepper, fresh cream, salt leave it for 1 to 2 hours for marination.
  3. Then put the chicken piece then green chili then another chicken pieces and green chili.
  4. When all the skewers becomes ready then give it steam of coal.
  5. When it turns to golden color then serve it hot.
