Ingredients For Maghaz Nali Nihari:

  • Brain 1
  • Bone marrow  as required
  • Meat  1/2 kg
  • Ginger garlic paste 1 tbsp
  • All spice powder 1/2 tbsp
  • Chopped ginger 2 tbsp
  • Red chili powder 1 tbsp
  • Turmeric  1 tsp
  • Coriander powder 2 tbsp
  • Chopped onion 1
  • Green chilies 4
  • Salt  to taste
  • Flour 2-3 tbsp
  • Oil  1 cup
  • Lemon  3
  • Green coriander  1 bunch

For Spice Bag:

  • Dried ginger 6-7 tbsp
  • Fennel seeds  1 tbsp
  • Big cardamom 8

To Boil Brain:

  • Garlic 3
  • Black peppercorn  4

Method:

  1. First pour oil in a pan, make onions golden brown.
  2. Now add ginger garlic paste, turmeric, chopped red chilies and chopped garam masala roast it well.
  3. After that add bone marrow roast it.
  4. When oil separates pour water take a muslin cloth add sonth, fennel and big cardamom make its bag.
  5. Then add salt cover and let it cook.
  6. When the mutton is tendered then filter it
  7. After that add garlic cloves, black pepper boil them along with brain, make its pieces.
  8. Fry it in separate pan.
  9. Now add green chilies, lemon juice, ginger and green coriander simmer it for 5 minutes.
  10. Knead the flour, take water in a bowl and mix it into nihari stir it continuously.
  11. After that keep its temperature low and simmer, while serving add green coriander, green chilies and chopped ginger.

Ingredients For Gola Kabab:

  • Beef mince 1/2 kg
  • Bread slices 2
  • Lemons 3
  • Green chilies 4
  • Green coriander 1/2 bunch
  • Oil 1/2 cup
  • Black pepper 1 tsp
  • Raw papaya paste 1 tbsp
  • Gram flour 2 tbsp
  • Chopped ginger 2 tbsp
  • Seekh kabab masala 2 tbsp
  • Fresh cream 2 tbsp
  • Red chili powder 1/2 tbsp
  • Salt  to taste

Method:

  1. First add beef mince, seekh kabab masala, bread slices chop it well.
  2. Now add gram flour, salt, chopped red chilies and raw and chopped papaya mix it well.
  3. Now make big rolls, give it shape of kabab shallow fry them in hot oil.
  4. When the oil is fried then add lemon juice, chopped ginger, chopped green chilies, green coriander, chopped black pepper simmer it for 5 minutes.
  5. Serve the delicious gola kabab.

Ingredients For Pepper Mutton Masala:

  • Mutton boneless 1/2 kg
  • Black pepper 1 tbsp
  • Ginger garlic paste 1 tbsp
  • Salt  to taste
  • Lemons 3
  • Green chilies 6
  • Oil  1/2 cup

Method:

  1. Take a pan add boneless mutton, make small pieces, salt, and ginger garlic paste dry its water.
  2. Now pour oil roast it well.
  3. Then add water tender the mutton.
  4. Add chopped black pepper, chopped green chilies and lemon juice roast it lightly and simmer it.
  5. After 10 minutes delicious pepper mutton masala is ready.
