Chicken Noodle Laska

Ingredients:

  • Chicken 1/2 kg
  • Coriander 1 tbsp
  • Ginger 1 inch
  • Lemon grass 2
  • Lemon juice & rind 1
  • Fish sauce 2 tbsp
  • Soya sauce 1 tbsp
  • Coconut milk 200 ml
  • Garlic slice 3 cloves
  • Red chilies slice 3
  • Chopped coriander handful
  • Green onion slice 2-3'
  • Cooked rice noodles 300 gm
  • Mint leaves handful
  • Sesame oil 1 tbsp

Method:

  1. Add chicken, coriander, ginger, lemon grass, lemon juice & rind and salt in big saucepan.
  2. Then add water as required and cook on low flame for 40 minutes or till meat separates from bones.
  3. Then take out chicken in plate and wrap in foil.
  4. Then strain stock in clean sauce pan and take it out.
  5. Then separate chicken from bones, cut into pieces, add in stock and bring to boil.
  6. Now put fish sauce, soya sauce, coconut milk, garlic, red chilies and chopped coriander and simmer it for 2 minutes.
  7. Then add green onion and lemon juice.
  8. Divide cooked rice noodles into 6 bowls and put chicken and vegetables.
  9. Then put stock and serve.

Chicken Noodle Laska is popular spicy noodle soup in Indonesia, Malaysia and Singapore (Peranakan). It is prepared with rice noodles, chicken & coconut milk. It can be prepared with fish or prawn.
