Sun-dried Tomato Fish

Ingredients:

  • Boneless fish fillet 4
  • Sun-dried tomatoes 10-12
  • Garlic 12-14 cloves
  • Green onion 2-3
  • Olive oil 2 tbsp
  • Salt to taste
  • Crushed black pepper to taste
  • Extra virgin olive oil 1 tsp
  • Chopped spinach leaves 7-8
  • Capsicum strips for garnish

Method:

  1. Put garlic cloves and sun-dried tomatoes and in grinder and grind it.
  2. Now cut green onion into finely.
  3. Then put green onion, olive oil and salt in grinder, grind it and make finely paste.
  4. Now keep fish fillet on plate, sprinkle salt and black pepper and rub them nicely.
  5. Spread paste on fish, sprinkle green onion, keep second fillet and cover it.
  6. Repeat this one more time.
  7. Then sprinkle some olive oil, put fish sandwich in steamer, steam it for 5-7 minutes or till done or bake in oven on 180 degrees C for 12 minutes.
  8. Now heat extra virgin olive oil in pan, add remaining garlic cloves and saute it.
  9. Now chop spinach into finely and add it.
  10. Then add salt and black pepper and saute for 2-3 minutes.
  11. Now add beans sprouts, mix it nicely and cook for 5-7 minutes.
  12. Now put spinach mixture in serving plate, keep baked fish, garnish with capsicum strips and serve.

Sun-dried Tomato Fish is amazing dish. It is new variety dish of fish. Fish is steamed or baked, served with spinach mixture and garnished with capsicum.
