Chocolate Pudding Cake, Achari Daalcha And South Indian Coconut Rice by Rida Aftab

Ingredients for Chocolate Pudding Cake:

  • Flour 1 cup
  • Eggs 2
  • Butter 50 gram
  • Vanilla essence 1 tsp
  • Milk 1 cup
  • Walnut chopped 1/2 cup
  • Coffee 2 tsp
  • Brown sugar 1 cup
  • Cocoa powder 1/2 cup
  • Baking powder 1 tsp
  • Sugar 2 cup

Method:

  1. Firstly, beat butter, brown sugar and sugar.
  2. Now add eggs, vanilla essence and milk and mix with little hands.
  3. Then add coffee, cocoa powder, baking powder and chopped walnut, fold it and bake for 30 to 35 minutes on 180 degrees C.

Ingredients for Achari Daalcha:

  • Mutton 1/2 kg
  • Gram lentils 1 cup
  • Red lentils 1 cup
  • Ginger garlic paste 2 tsp
  • Tomatoes ground 250 gram
  • Tamarind pulp 1/2 cup
  • Onion 1
  • Curry leaves 10
  • Coriander leaves 1/2 bunch
  • Green chillies 6
  • Dry red chillies 6 big
  • Chilli powder 2 tsp
  • Turmeric 1 tsp
  • Salt 1 tsp
  • Black cumin seeds 1 tsp
  • Green cardamom 4
  • Cloves 2
  • Cinnamon 1 stick
  • Bottle gourd 1/2 kg
  • Oil 1/2 cup
  • Mustard seeds 1 tsp
  • Onion seeds 1 tsp
  • Fennel seeds 1 tsp
  • Fenugreek seeds 1 tsp

Method:

  1. In mutti handi, add mutton, ginger garlic paste, salt, chilli powder, clove, green cardamom, cinnamon, black cumin seeds and 1 cup water, cover it and cook it.
  2. When meat is tendered, add gram lentil, red lentil and 1 cup warm water and cook on low flame.
  3. When daal is tendered, add bottle gourd, green chillies and tamarind pulp and close flame.
  4. Heat oil in second pot, add red chillies, curry leaves, mustard seeds, onion seeds, fennel seeds and fenugreek seeds and give bhagaar. 

Ingredients for South Indian Coconut Rice:

  • Rice 1/2 kg
  • Gram lentils boiled 1/2 cup
  • Pigeon peas boiled 1/2 cup
  • Dry red chillies 6
  • Curry leaves 6
  • Mustard seeds 1 tsp
  • Fresh coconut grated 1 cup
  • Turmeric 1 tsp
  • Salt 1/2 tsp
  • Onion 1
  • Crushed red pepper 1 tsp
  • Oil 1/2 cup

Method:

  1. Heat 4 tbsp oil and fry onion until brown.
  2. Now add 1 cup water, salt, turmeric, gram lentils boiled and pigeon peas boiled.
  3. When boils, add rice and water and cook until water dries. Now keep on simmer.
  4. Heat remaining oil in frying pan, add curry leaves, dry red chillies, mustard seeds and fresh coconut grated and fry it.
  5. Then put on rice, mix it and sprinkle crushed red pepper.
