Chukander chicken pulao

Inhredients;

  • Chukander               3kg
  • Chicken                  1-1/2 kg
  • Rice                            2 cup
  • Onion                           1
  • Clove                            8
  • Cinamon                     6
  • Javatri                         8
  • Oil                           3 tbsp
  • Salt                     2-1/2tbsp
  • Cumin seeds           2 tbsp
  • Ginger garlic paste 2 tbsp
  • Rains and coconut for garnish
  • Red chilli whole        8

Method;

  1. Peel chukander , wash properly and cut in 4 parts.
  2. In  a pot, boil chukanddr for 20 mins.
  3. When the chukander is boiled , separate the pink water in a saucepan.
  4. Separate chicken from bones, cut into small cubes add in the pink water and bring it to a boil.
  5. Wash rice and keep in water for 2 hours.
  6. Heat oil in a pan , fry onion till brown.
  7. Add ginger garlic paste and saute.
  8. Add all the spices fry for 2-3 mins, add 3-1/2 cups of pink water  and bring to a boil.
  9. Add boiled chicken and rice , cover with lod and cook for 20 mins.
  10. Garnish with raisins and sliced coconut.

Okra raita

Ingredients;

  • Okra                           1/2 cup
  • Yoghurt                        1 cup
  • Ginger                          1 tsp
  • Green chilli                 1 tsp
  • Curry leaf                       8
  • Raii                             1/4 tsp
  • Chana daal                1/4 tsp
  • Maash daal                1/4 tsp
  • Whole red chilli           2
  • Turmeric pwd           1 pinch
  • Salt                              to taste
  • Oil                                 2 tbsp

Method;

  1. Heat oil in a pan, fry raii,  maash daal and channa daal in it.
  2. Add green chillies, red chilli , ginger and curry leaf , fry for a few seconds.
  3. Add okra and turmeric , cover with lid cook for a while on low flame.
  4. Now add thos cooked okra mixture in yoghurt , add salt.
  5. Serve with steamed rice.
