Sea Salad, Machli Ka Salan And Gulzar Special Machli Salan Masala by Chef Gulzar

Ingredients for Sea Salad:

For Fish:

  • Fish Fillet 125 gm
  • Garlic paste 1 tsp
  • Red chili powder 1/2 tsp
  • Turmeric powder 1/2 tsp
  • Lemon juice 2 tbsp
  • Olive oil 1 tsp
  • Salt  to taste

For Salad:

  • Noodles (boiled)  1/2 packet
  • Chopped onion 1
  • Green onion 1 bunch
  • Tomato 1
  • Olives 50 gm

For Dressing:

  • Mustard paste 1 tsp
  • Worcestershire sauce 2 tbsp
  • Lemon juice 2 tbsp
  • Green chilies 2-3
  • Garlic (chopped) 1-2 cloves
  • Olive oil 1 tbsp
  • Salt to taste

Method:

  1. For Fish: Firstly, take fish fillet in a mixing bowl, add olive oil, garlic paste, red chilies, turmeric powder, lemon juice, salt, mix it nicely and leave it for few minutes.
  2. Now add oil in a grill pan and cook fish on  both sides.
  3. Then take out from grill pan and keep on plate, cool it and cut into slices.
  4. For Dressing: In one mixing bowl, put mustard paste, worcestershire sauce, lemon juice, green chilies, garlic, olive oil, salt and mix it nicely.
  5. Dressing is ready.
  6. For Salad: Now take onion, green onion, tomato and olives in a mixing bowl and mix them nicely.
  7. Now put noodles, dressing and fish slices, mix it well and serve.

Ingredients for Machli Ka Salan:

  • Fish 1/2 kg
  • Garlic chopped 3-4 cloves
  • Onion 1
  • Yogurt 250gm
  • White vinegar 1tbsp
  • Gulzar special machli salan masala 3 tbsp
  • Green chilies  3-4
  • Lemon juice 2 tbsp
  • Green coriander 1/2 bunch
  • Oil 2 tbsp
  • Salt to taste

Method:

  1. Put salt on fish, fry it and keep aside.
  2. Now in one pan, heat oil and fry ginger and onion.
  3. Now add yogurt, salan masala in it, mix it nicely and roast it.
  4. When roasted, add lemon juice and mix it.
  5. Then add the fried fish and mix it with light hand.
  6. Lastly, dish out the fish, garnish with green coriander and serve it.

Ingredients for Gulzar Special Machli Salan Masala:

  • Fenugreek seeds 1 tsp
  • Mustard seeds 1 tsp
  • Carom seeds 1/2 tsp
  • Red chilies 50 gm
  • Turmeric powder 1 tbsp
  • Cloves 10
  • Small cardamom  10
  • Cinnamon 2
  • White cumin seeds 1 tbsp

Method:

  1. Roast all ingredients and grind it
  2. This masala is for 2 kg meat.
