Finger Fish, Chicken Finger And Kashmiri Pulao by Chef Farid-ul-Haq

Ingredients for Chicken Finger:

  • Chicken strips 8-10
  • Eggs 4
  • Corn flour 6 tsp
  • Red chili powder 2 tsp
  • Maida 6 tsp
  • Salt 1 tsp
  • Chinese salt 1 tsp
  • Oil as required
  • Bread crumbs 1/2 cup
  • Spice mixture powder 2 tsp
  • White pepper 2 tsp
  • Vinegar 1/2 tsp
  • Soya sauce 1/2 tsp
  • Mustard 1/2 tsp
  • Lemon 1

Method:

  1. Mix eggs,corn flour, salt,chinese salt, red chili, spice mixture, white pepper, vinegar, soya sauce, mustard and lemon and beat it.
  2. Dip chicken strips in batter and coat with bread crumbs,
  3. Now fry chicken in hot oil and when golden in color, dish out.
  4. Now serve it with ketchup or garlic sauce.

Ingredients for Kashmiri Pulao:

  • Chicken 1 kg
  • Chopped onion 1 tbsp
  • White pepper 3 tsp
  • Salt 1 tsp
  • Ginger garlic paste 1 tbsp
  • Spice mixture as required
  • Water 1 liter
  • Rice 1 kg
  • Almond for garnishing
  • Pistachio for garnishing
  • Currants for garnishing
  • Pineapple for garnishing

Method:

  1. Fry chopped onion until it turn to golden brown.
  2. Now add 1 garlic and ginger paste in onions and allow to cook.
  3. Put chicken, spice mixture, salt, chinese salt in mixture and allow to cook until it change its color.
  4. Now pour water in it.
  5. Add soaked rice and put few currants to sweetened in chicken and allow to cook. Now dish out kashmiri pulao and garnish with pineapple, pistachio and golden brown onions.

  1. Beat eggs, corn flour, salt, chinese salt, red chili, spice mixture, white pepper, vinegar, soya sauce, mustard and lemon and make batter nicely.
  2. Dip the fish strips in batter and then place in bread crumbs and then allow to deep fry.
  3. When turn to golden then dish out finger fish.
  4. Serve it with ketchup or garlic sauce.
