Chat Pati Chicken Biryani, Chicken Donuts And Zeera Raita by Chef Gulzar

Ingredients for Chat Pati Chicken Biryani:

  • Rice 1/2 kg
  • Chicken 700 gm
  • Yellow food color 1 pinch
  • Onions 2
  • Potatoes 2-3
  • Bay leaves 2-3
  • Green chillies 2-3
  • Green coriander 1/2 bunch
  • Ginger 1 inch
  • Yogurt 1 cup
  • Tamarind paste 1/2 tsp
  • Mint leaves 1/2 tsp
  • Coriander powder 1 tsp
  • Turmeric powder 1 tsp
  • Cumin seeds 1 tsp
  • Chaat masala 1tsp
  • Lemon juice 1 tbsp
  • Nutmeg and mace 1/2 tsp
  • Garlic (chopped) 2 tbsp
  • Red chili powder 2 tbsp
  • Oil 3 tbsp
  • All spice as required
  • Salt to taste

Method:

  1. For Making Rice: Wash with water nicely.
  2. Then soak in water for 1 to 2 hours.
  3. Now put curry leaves, cumin and salt in water and boil it.
  4. When water is boiled, put rice, boil 1/4, strain it and keep aside.
  5. For Making Korma: Boil potato with yellow color, water and salt hard.
  6. Add ginger, garlic, green coriander, green chilies, salt and water in blender and blend it.
  7. Now heat oil in pan and saute whole spice powder.
  8. Then add onion, fry it, put green masala and roast it .
  9. Now add chicken and roast it.
  10. Then add chopped red chili, chopped coriander, chopped turmeric, nutmeg and mace in yogurt and roast it well.
  11. When masala is roasted and tendered well, add turmeric paste and mix it well.
  12. In end, add lemon juice, mix it and remove from heat.
  13. For Making Layer: Put korma in small quantity in pot. Then put rice.
  14. After that, put korma, brown onion, green coriander and mint.
  15. Then put rice, in end, put potato and yellow color and simmer it.
  16. When it is simmered, take it out in dish, sprinkle chaat masala and serve.

Ingredients for Chicken Donuts:

  • Chicken mince 1/2 kg
  • Boiled potatoes 2
  • Eggs 3
  • Flour 1 cup
  • Green chilies 5-6
  • Bread crumbs 1 cup
  • Baking powder 1/2 tsp
  • Crushed cumin 1 tbsp
  • Gram flour 1 tbsp
  • Red chili 1 tbsp
  • Ginger garlic paste 2 tbsp
  • Mint leaves 1 bunch
  • Oil to deep fry
  • Salt to taste

For Garnishing:

  • Salad leaves 3-4
  • Cucumber 1-2
  • Tomatoes 1-2

Method:

  1. Firstly, boil potatoes, mash it and add chop green chillies and coriander finely.
  2. Now in mixing bowl, add chicken mince, eggs, flour, bread crumbs, baking powder, chopped cumin, gram flour, red chili powder, ginger garlic paste, chopped green chilies, mint and salt, mix it nicely and make hard dough.
  3. Now spread some oil on cutting board and spread mixture.
  4. Then give shape of donuts with the help of mold.
  5. Now heat oil in pan and deep fry donuts until light golden.
  6. Takeout in a serving plate and dish out it.
  7. In end, garnish with salad leaves, cucumber and tomatoes and serve.

Ingredients for Zeera Raita:

  • Yogurt 250 gm
  • Crushed cumin 1 tsp
  • Red chili powder 1/2 tsp
  • Chinese salt 1/2 tsp
  • Salt to taste

Method:

  1. Put all ingredients in blender jug, blend and serve.
