Malai Seekh Kabab, Podina Paratha And Tandoori Motai Tikka by Shireen Anwer

Ingredients for Malai Seekh Kabab:

  • Beef mince 1/2 kg
  • Mint 2 tbsp
  • Coriander leaves 3 tbsp
  • Cashew nuts 8
  • Onion 1
  • Green chilies 6
  • Ginger garlic paste 1 tbsp
  • Poppy seeds 2 tbsp
  • Sesame seeds 1 tbsp
  • Egg yolk 1
  • Salt 1 tsp
  • Oil 1/4 cup
  • Malai 2 tbsp
  • Coriander roasted 1-1/2 tsp
  • Cumin roasted 1-1/2 tsp
  • All spice 1 tsp
  • Black pepper 1/2 tsp
  • Chilli powder 1/2 tsp

Method:

  1. Firstly, grind green coriander, mint, chopped green chilli, onion, cashew nuts, ginger garlic paste, poppy seeds and sesame seeds and make smooth paste.
  2. Now chop mince so much, so that it becomes smooth paste.
  3. Then put chopped masala, egg yolk, salt, malai, chopped and crushed coriander, chopped and crushed cumin, garam masala, black pepper and chopped red chili, mix it nicely and cool for 30 minutes.
  4. Then make seekh kabab, brush with oil and bake for 15 minutes or fry in pan.
  5. In end, give simmer of coal.

Ingredients for Podina Paratha:

  • Wheat flour 2 cups
  • Flour 1 cup
  • Salt 1/2 tsp
  • Sugar 1 tsp
  • Mint finely 4 to 5 tbsp
  • Ghee as required
  • Water to knead as required

Method:

  1. Strain wheat, flour and salt.
  2. Now add water as required and knead it.
  3. Then put ghee and chopped mint and mix it nicely.
  4. Now divide into 8 equal pieces and make balls.
  5. After that, roll it in size of quarter plate and spread ghee on it.
  6. Then cut into shape of cone.
  7. Now heat tawa and put oil.
  8. Then cook paratha for 2 to 3 minutes and serve hot.

Ingredients for Tandoori Motai Tikka:

  • Boneless chicken 1/2 kg
  • Black cumin 1/4 tsp
  • Crushed black pepper  3/4 tsp
  • Butter to brush as required
  • Grated cheese 3 tbsp
  • Fresh cream 2 tbsp
  • Egg white 1
  • All spice 1 tsp
  • Ginger garlic 1 tbsp
  • Green chili paste 1 tbsp
  • Lemon juice 1 tbsp
  • Salt 1 tsp
  • Yogurt 4 tbsp

Method:

  1. Marinate chicken boneless cubes with black cumin, chopped black pepper, butter, grated cheese, fresh cream, egg yolk, garam masala, ginger garlic paste, green chili paste, lemon juice, salt and yogurt.
  2. Now put in skewers.
  3. Then grill in preheated oven on 180 degrees C for 15 minutes.
  4. In end, brush with butter and take out.
