Tikka Masala And Bhindi Dum Pukht by Sara Riaz

Ingredients for Tikka Masala:

  • Chicken boneless  1/2 kg
  • Yogurt  4 tbsp
  • Ginger  1 tsp
  • Cumin powder  1 tsp
  • Red chili  1 tsp
  • Lemon juice  4 tbsp
  • Cardamom powder  1/2 tsp
  • Gram flour  1 tbsp
  • Salt  1 tsp
  • Oil  2 tbsp

For Gravy:

  • Tomato  2 pieces
  • Chopped ginger  1 tbsp
  • Chopped garlic  1 tbsp
  • Chopped green chili  1 tbsp
  • Crushed coriander  1 tbsp
  • Crushed red chili  1 tbsp
  • Dry fenugreek  1 tbsp
  • Salt  1/2 tsp
  • Coriander  2 tbsp

Method:

  1. Cut chicken cubes into 2 inch.
  2. Now marinate chicken with yogurt, ginger, garlic, cumin powder, salt, red chili, lemon juice, coriander powder, roasted gram flour and oil for 1 hour.
  3. Cook chicken in one pot and give smoke of coals.
  4. For gravy: Heat oil and fry chopped ginger and chopped garlic.
  5. Now add chopped green chilies, chopped tomato, salt, roasted & chopped coriander, chopped red chili and dry fenugreek and roast it.
  6. In end, put chicken pieces and fry.
  7. Garnish with green coriander on top and serve.

Ingredients for Bhindi Dum Pukht:

  • Lady finger  1/2 kg
  • Mustard seeds  1/2 tsp
  • Onion  1 pieces
  • Potato  1/2 kg
  • Salt  1 tsp
  • Turmeric  1 tsp
  • Red chili  1 tsp
  • Coriander  1 tsp
  • Tomato  2 pieces
  • Coriander  2 tbsp
  • Green chili  6 pieces

Method:

  1. Wash lady finger nicely, dry it and cut its upper side.
  2. Heat oil, put mustard seeds and lady finger and fry it.
  3. Together add onion slices and fry it.
  4. Now put salt, red chili, turmeric and coriander powder and mix it nicely.
  5. Peal potatoes, cut into pieces, boil it and add lady finger.
  6. In end, put chopped tomato, green coriander and green chili and simmer it.
  7. When ready, serve.
