Baked Finger Fish, Fish Biryani And Sweet Chilli Sauce by Chef Gulzar

Ingredients for Baked Finger Fish:

  • Fish 500 gm
  • Egg whites 2
  • Corn flour 1 tbsp
  • Ginger garlic paste 1 tbsp
  • Red chili powder 1 tbsp
  • Turmeric 1/2 tsp
  • All spice powder 1/2 tsp
  • Carom seeds 1/3 tsp
  • Mustard powder 2 tbsp
  • Lemon juice 2 tbsp
  • Flour 2 tbsp
  • Yellow food color 1 pinch
  • Oil 1 tbsp
  • Salt to taste


  1. First add egg white, corn flour, ginger garlic paste, red chili powder, turmeric, all spice powder, flour, lemon juice, carom seeds, mustard powder, oil, yellow color and salt in one mixing bowl, mix well and make batter.
  2. Now cut fish in fingers, marinate with batter and leave for 30 minutes.
  3. Then grease oven tray with oil and set fillet.
  4. After that, bake on 200 degrees C, take out and serve with sauce.

Ingredients for Fish Biryani:

  • Fish 700 gm
  • Garlic paste 2 tbsp
  • BBQ masala 2 tbsp
  • Vinegar 2 tbsp
  • All spice powder 1 tsp
  • Corn flour 1 tbsp
  • Oil to fry
  • Salt to taste

For Biryani:

  • Rice 1/2 kg
  • Tomatoes 3
  • Dried plums 1/2 cup
  • Onion 2
  • Yogurt 1 cup
  • White cumin 1 tsp
  • Black cumin 1/2 tsp
  • Red chili flakes 1-1/2 tbsp
  • All spice as required
  • All spice powder 1 tsp
  • Ginger garlic powder 3 tbsp
  • Yellow food color as required
  • Green coriander 1/2 bunch
  • Mint leaves 1/2 bunch
  • Green chilies 5
  • Clarified butter 1 cup
  • Salt to taste


  1. For making fish: Put fish, garlic paste, bbq masala, vinegar, all spice powder, cornflour and salt in one mixing bowl and mix well.
  2. Heat oil in pan and shallow fry fish cubes.
  3. Keep on a tissue paper, so that oil absorbs.
  4. For making rice: Wash rice and soak for 2 hours.
  5. Then put water. black cumin and salt in one pot, mix it and boil it.
  6. Now add rice and cook until 1/4th.
  7. Now strain its water. Rice is ready.
  8. For making korma: Heat oil in one pan and add all spice.
  9. When it becomes crispy, put onions and do brown.
  10. Then add ginger garlic paste and roast it.
  11. Than add yogurt, green chilies, red chili flakes, all spice powder, white cumin and mix it and cook it well.
  12. Then add dried plum and tomato, mix well and cook for 5 to 6 minutes.
  13. Korma is ready.
  14. For making layer: Put the part of korma oil in pot.
  15. Put half rice. Now put green coriander and green chilies.
  16. Then put remaining korma.
  17. Then put remaining rice and put coriander, mint and green chilies.
  18. Pour water in one bowl, put food color, mix it well and put on sides or rice.
  19. Now keep fried fish on rice and simmer on medium flame.
  20. Take out in one serving dish and serve.
