Batata Bread Kabab, White Chicken Korma And Sharkarqandi Ki Kheer by Rida Aftab

Ingredients for Batata Bread Kabab:

  • 6 bread slices
  • 2 boiled potatoes
  • 6 green chilies
  • 1 tbsp whole coriander seeds
  • 1 tbsp cumin
  • 6 garlic cloves
  • 1 piece of ginger
  • 2 eggs
  • 1 tsp crushed black pepper
  • 1 tsp salt
  • 1 tsp all spice powder
  • 1 tsp chaat masala
  • 1 onion
  • Oil for frying

Method:

  1. Put bread slice, green chilies, whole coriander, cumin, garlic cloves, ginger piece, crushed black pepper, salt, all spice powder  and chaat masala a chopper and chop it.
  2. Now take it out, put boiled potatoes and egg and mix it.
  3. Then make small kebabs, beat egg and coat it.
  4. In end, heat oil and shallow fry kebab.

Ingredients for White Chicken Korma:

  • 1 kg chicken
  • 375 grams yogurt
  • 250 grams onion
  • 6 cardamoms
  • 1 cup oil
  • 50 grams green chilies
  • 1 tsp salt
  • 1 tsp whole black pepper
  • 1 tsp white cumin
  • 1 tsp mace, nutmeg
  • 1 tbsp kewra
  • 2 tsp ginger garlic paste
  • 1/2 tsp turmeric
  • 2 tbsp chopped ginger

Method:

  1. Heat oil in pan and put grinded onion. Then dry its water on low flame.
  2. After that, mix chicken, salt, turmeric, whole black pepper, ginger garlic paste, mace, nutmeg, green chilies with yogurt, add in it. Now cover it and cook on medium flame.
  3. When chicken tenders, roast it and put 1 glass water. When it is boiled 2 to 3 times, crush cardamom and cumin and add in it.
  4. Together sprinkle kewra and chopped ginger and turn off stove.
  5. Delicious white chicken korma is ready.

Ingredients for Sharkarqandi Ki Kheer:

  • 1/2 kg sweet potatoes
  • 2 cups caster sugar
  • 250 grams ghee
  • 1/2 tsp cardamom
  • 100 grams almonds, pistachios
  • 1 cup flour
  • 1/2 kg khoya
  • 1/2 tsp nutmeg
  • Silver paper  as required

Method:

  1. First roast flour in ghee.
  2. Heat ghee in separate pot, put boiled shakarqandi and roast it.
  3. Now put sugar powder, flour, cardamom, khoya and nutmeg, mix well and turn off stove.
  4. Then grease one tray, spread all mixture and sprinkle almonds and pistachios on top.
  5. Put silver paper, cool it and cut into pieces.
