Aloo Samosa, Aloo Chat And Meethay Paray by Chef Gulzar

Ingredients For Aloo Samosa:

For Samosa Strip:

  • White flour  250 gm
  • Rice flour  250 gm
  • Whole cumin  1 tbsp
  • Clarified butter 4 tbsp
  • Salt  to taste

For Filling:

  • Boiled mash potato 1/2 kg
  • Chopped onion 1
  • Crushed red chili  1 tbsp
  • Pomegranate seed  1 tbsp
  • Garlic paste  1 tsp
  • All spice powder  1 tsp
  • Carom seed  1/2 tsp
  • Roasted cumin  1 tsp
  • Green coriander  1 bunch
  • Green chilies  4 to 5
  • Chinese salt 1/2 tsp
  • Oil  for fry
  • Salt to taste


  1. First put the flour, white flour, whole cumin, ghee, salt, knead it and make its dough soft.
  2. Spread the flour with hand, and roll out the roti big and cut it into strips.
  3. For making filling:
  4. Boil the potatoes and mash it nicely.
  5. Now put the pomegranate seeds, chinese salt, salt, chopped red chilies, green coriander, green chilies, chopped onion, chopped and crushed cumin, nutmeg mace, mix it well.
  6. Then add potatoes and mix it.
  7. After that fill the mixture in samosa strips, then close it.
  8. Then golden fry them and take it out and keep it on a side.

Ingredients For Aloo Chat:

For Chat:

  • Boiled potato  2 to 3
  • Boiled chickpeas  125 gm
  • Whisked yogurt 125 gm
  • Chat masala  as required
  • Green coriander 1/2 bunch

For Chutney: 

  • Green coriander  1 bunch
  • Green chilies  10 to 12
  • Garlic 6 to 8 cloves
  • Lemon juice  4 to 5 tbsp
  • Mint 1 bunch
  • Olive oil  2 tbsp
  • Salt to taste


For making Chutney:

  1. Pour water, green coriander, green chilies, garlic, mint, boil it for 5 minutes.
  2. Then pour water in a blender, along, lemon juice, olive oil. salt, blend it smooth.
  3. Green chutney is ready.

For Serving Chat:

  1. Now take a serving plate.
  2. First put the samosa, then put boiled kabuli chana, boiled potato.
  3. Now put hari chutney, yogurt beat it well.
  4. In the end add green coriander, chat masala as required then serve.

Ingredients For Meethay Paray:

  • White flour  1/2 kg
  • Sugar  1/2 kg
  • Cardamom powder  1 pinch
  • Baking powder  1 tsp
  • Clarified butter 2 tbsp
  • Oil  for fry


  1. First take a flour, ghee, heat it.
  2. Now add baking powder mix it and knead it.
  3. Then roll it and cut it into shape then fry it.
  4. Now make the syrup with water and sugar, put the paray and leave it for a while.
  5. In the end take it out and then serve.
