Dahi Chat, Kachori And Maal Pura by Chef Gulzar

Ingredients For Kachori:

For Dough:

  • White flour  2 cup
  • Clarified butter 2 tbsp
  • Oil for fry
  • Salt  to taste

For Filling:

  • Boiled gram  1 cup
  • Crushed cumin  1 tbsp
  • Whole red chili  5 to 6
  • Salt  to taste

Method:

  1. First put flour, ghee, salt mix it well in a bowl and knead it.
  2. Now add boiled gram, chopped and roasted cumin, whole red chilies, salt, chop it well.
  3. Then knead it and make small portions, fill the chopped boiled gram roll out it .
  4. Then pour oil in pan, fry the kachori on low temperature, serve it hot.

Ingredients For Dahi Chaat:

  • Whole spice  1-1/2 tsp
  • Red chili powder 1 tbsp
  • Oil  as required

For Garnish:

  • Whisked yogurt  as required
  • Tamarind chutney  as required
  • Green coriander  as required
  • Papri  for garnish

Method:

  1. First boil the kaboli chana wash it and keep it in water adding some soda.
  2. Now pour water and turn on the stove.
  3. When it become near to boil then add masoor ki daal, tender both nicely.
  4. For making bhagar, pour oil, yogurt, ginger garlic paste, green chilies, dry fenugreek, chopped garam masala, chopped coriander, whole garam masala, chopped red chilies for bhagar, cook it for 15 minutes.
  5. Cholay are ready.
  6. Then put chickpea, beaten egg, tamarind pulp, green coriander, cabbage, papri for garnishing.

Ingredients For Maal Pura:

  • Milk  1 liter
  • Khoya  250 gm
  • Corn flour  1 cup
  • Sugar  2-1/2
  • Food color  1/2 tsp
  • Kewra essence  few drops
  • Baking powder  1 tsp
  • Dry fruits  as requires
  • Clarified butter  for fry

Method:

  1. Pour water, sugar, few drops of kewra essence, make a syrup.
  2. Pour milk, boil it well so that it remains to half.
  3. Then remove it from stove and cool it.
  4. Pour milk, corn flour, baking powder, flour, khoya, dry fruit, pinch of yellow color, mix it well.
  5. Then make a paste with batter make it thick.
  6. After that pour oil in a deep pan heat it and add mixture deep fry it, then take it out and put it into syrup.
  7. In the end put the pieces in a serving plates while serving.
