Gujrati Biryani, Fruity Vermicelli Surprise And Dahi Aloo Chaat by Shireen Anwer

Ingredients For Gujrati Biryani:

  • Chicken  1 kg 12 pieces
  • Crushed red pepper 2 tsp
  • Turmeric 1/2 tsp
  • Mixed whole spices  1 tbsp
  • Ginger garlic paste 1 tbsp
  • Nutmeg  1/4 tsp
  • Mace  1/4 tsp
  • Green cardamom  1/4 tsp
  • Oil  1 cup
  • Brown onion  1 cup
  • Yellow color  1/4 tsp
  • Kewra water  1 tbsp
  • Tomatoes  1 sliced
  • Green chilies  10
  • Coriander leaves  1/2 bunch
  • Mint leaves  1/2 bunch
  • White cumin roasted 1 1/2 tsp
  • Rice  1/2 kg
  • Salt  2 tbsp
  • Mixed whole spices  1 tbsp

Method:

  1. First marinate the chicken with yogurt, ginger garlic paste, salt, chopped red chilies, turmeric, roasted and chopped white chickpea and coriander.
  2. Now pour oil add put the onions with marinated chicken, cover and cook it till becomes ready.
  3. Then take half rice, chicken, remaining rice, tomatoes, chopped green masala, nutmeg, mace, chopped green coriander and remaining rice, kewra mix them all with pinch of yellow color, spread it and simmer it for 20 minutes.

Ingredients For Fruity Vermicelli Surprise:

  • Milk  1 liter
  • Color vermicelli  1/2 cup
  • Coconut macrons crushed 1 cup
  • Condensed milk  1/2 tin
  • Cream  1 packet
  • Custard powder  2 tbsp
  • Corn flour  1 tbsp
  • Milk  1/2 cup
  • Fruit cocktail  1 large tin
  • Almonds and pistachio  2 tbsp

Method:

  1. First boil the milk, add colored vermicelli, cook it for 10 minutes.
  2. Now take a bowl add custard powder, corn flour, milk mix it well.
  3. Then cook it till becomes thick.
  4. Now take it out add condensed milk and cream mix it well.
  5. Then add fruit cocktail and coconut macaroni, and fold it.
  6. Then add almonds and pistachio slices for garnish then serve it cool.

Ingredients For Dahi Aloo Chaat:

  • Potatoes  2-3
  • White chickpeas  1 cup
  • Salt  1 tsp
  • Black pepper  1 tsp
  • Lemon juice  1 lemon
  • Crushed chilies  1/2 tsp
  • Chaat masala  1/2 tsp
  • Onion 1 piece
  • Tamarind sauce  2-3 tsp
  • Actiplus  1 packet

Method:

  1. First boil the potatoes, remove its skin.
  2. Now add chopped potatoes with salt, chopped black pepper and chopped red chilies.
  3. Then add white boiled chickpea, make small kababs.
  4. Then fry the kababs, until they become golden brown.
  5. Add actiplus, chat masala, chopped onion, tamarind, beat it with remaining chickpea.
  6. Now put it on aloo ky kabab.
  7. Garnish it with tamarind chutney and chaat masala.
