Egg Biryani, Mohan Thaal And Cucumber Raita by Zarnak Sidhwa

Ingredients For Mohan Thaal:

  • Gram flour  2 cup
  • Milk  4 tbsp
  • Ghee  3/4 cup
  • Sugar   1 1/2 cup
  • Nutmeg powder  a large pinch
  • Green cardamom  1/4 tsp
  • Almonds 10
  • Pistachio  10

Method:

  1. Heat milk in a pan.
  2. Add ghee and heat till it melts.
  3. Place gram flour in a bowl, add the milk ghee mixture and mix with finger tips till it resembles breadcrumbs pass it through thick sieve, pressing lightly to remove lumps.
  4. Cook together water and sugar to make a syrup.
  5. Heat remaining ghee in a pan add the sieved gram flour and saute on medium heat, stirring continuously, till fragrant and dark in color.
  6. Cook the syrup till it gets 1 string consistency.
  7. Add nutmeg powder and green cardamom powder to the gram flour and mix well.
  8. Set aside to cool completely.
  9. Add milk to the sugar syrup and mix well.
  10. Add the syrup, little by little, to the gram flour mixture and mix well.
  11. Pour into a greased tray and spread evenly.
  12. Sprinkle almonds and pistachios over the gram flour mixture and press lightly.
  13. Set aside to cool completely.
  14. Cut into squares, separate the pieces and serve.

Ingredients For Egg Biryani:

  • Hard boiled eggs  6
  • Rice boiled  1 1/2 cup
  • Oil  3 tbsp
  • Cloves  6-7
  • Green cardamoms  6-7
  • Cinnamon  2 small stick
  • Onions chopped 2
  • Potatoes  2
  • Turmeric powder 1/4 tsp
  • Red chili powder 1/4 tsp
  • Salt  to taste
  • Tomatoes  2
  • Ginger garlic paste 1 1/2 tbsp
  • Green chilies  4
  • Yogurt  4 tbsp
  • Coconut milk  1/2 cup
  • Deep fried onions  3/4 cup
  • Fresh mint leaves  1/4 cup

Method:

  1. Heat oil in a pan.
  2. Add cloves, green cardamoms and cinnamon and saute.
  3. Add onions and saute.
  4. Heat ghee in a pan, Add ginger garlic paste, turmeric powder, red chili powder, tomatoes and salt.
  5. Cover and cook on low heat.
  6. Add eggs and saute, when the eggs are light brown remove them in a bowl.
  7. Add potatoes and cover and cook till lightly browned.
  8. Add whole green chilies and mix. Add rice, yogurt, coconut milk and mix.
  9. Add fried onion and mint leaves and mix.
  10. Halve eggs horizontally and add.
  11. Add little water and mix gentle and let it boil on high heat.
  12. Cover, reduce heat and cook till the rice is cooked.
  13. Serve hot garnished with the  remaining fried onions and mint leaves.

Ingredients For Cucumber Raita:

  • Cucumbers  2
  • Yogurt  3 cup
  • Mint leaves  a few
  • Coriander leaves  a few
  • Cumin powder  1/2 tsp
  • Black pepper  a pinch
  • Red chili powder  a pinch
  • Chaat masala  a pinch
  • Salt to taste

Method:

  1. Beat the curd until becomes smooth.
  2. Add the chopped cucumber and salt. mix well. pour this Raita in individual bowls.
  3. Sprinkle little bit of cumin powder, black pepper powder, red chili powder and chaat masala powder at the time of serving.
  4. Garnish with fresh coriander and mint leaves.
  5. Serve chilled.
