Murgh Do Piyaza, Makhni Sabzi And Dhaba Karahi by Zubaida Tariq

Ingredients For Dhaba Karahi:

  • Mutton/ beef 1 kg
  • Tomato ketchup 1/2 cup
  • Chili garlic sauce 1/2 cup
  • Red chili sauce 1 tbsp
  • Black pepper 1 tbsp
  • Crushed cumin 1 tbsp
  • Ginger powder  2 tbsp
  • Lemon juice 3
  • Green chilies 5
  • Salt  to taste
  • Oil 1 cup

Method:

  1. First make the small cubes of mutton and beef.
  2. Take a pan, add ginger garlic, salt let it cook.
  3. When water dries then add water, let it on simmer.
  4. Add tomato ketchup, chili garlic sauce, chopped green chilies, chopped red chilies pour oil and roast it.
  5. After that add chopped black pepper, roasted and chopped white cumin, lemon juice simmer it for 5 minutes.
  6. Serve the dhaba karahi with naan

Ingredients For Makhni Sabzi:

  • Carrots 2
  • Peas 1 cup
  • Potatoes 3
  • Chopped ginger 3
  • Capsicum 2 tbsp
  • Green chilies 4
  • Butter  2 tbsp
  • Red chilies  8
  • Turmeric 1 tsp
  • Salt to taste
  • Fresh cream 2 tbsp
  • Oil 1/2 cup

Method:

  1. First boil the potatoes, peel its skin, make its cubes.
  2. Now deep fry it in hot oil to make it golden brown.
  3. Then take a bowl add carrot pieces, pealed peas, capsicum cubes fry it lightly.
  4. After that add turmeric, whole red chilies, green chilies, salt and fried potatoes simmer and cover it.
  5. Now add butter and fresh cream simmer it for 5 minutes, serve it by putting chopped ginger.

Ingredients For Murgh Do Piyaza:

  • Chicken 1 1/2 kg
  • Chopped onion 5
  • Red chilies 8
  • Garlic 8 cloves
  • Ginger  2 tbsp
  • Yogurt  1 cup
  • Big cardamom  4
  • Cinnamon 1 piece
  • Black peppercorn 8
  • Coriander seeds 1 tsp
  • Turmeric 1 tsp
  • Sooki khatai 5
  • Oil  1 cup
  • Salt  to taste

Method:

  1. First pour oil add chopped onions make it golden brown.
  2. Now add chicken pieces, salt and turmeric cook it well.
  3. When the chicken water dries then roast it lightly.
  4. When the yogurt water dries then add chopped onions, whole coriander, garlic cloves, chopped ginger, big cardamom, cinnamon, whole black pepper, fennel, whole coriander and sooki khatai.
  5. Then simmer it for 2 to 3 minutes.
  6. When oil comes up then delicious murgh do piyaza is ready.
