Sweet & Sour Shimla Mirch, Chicken Charga And Badam Ka Sharbat by Zubaida Tariq

Ingredients For Chicken Charga:

  • Chicken 1 kg
  • White vinegar  1/2 cup
  • Yellow food color as required
  • Lemons 4
  • Yogurt 1 cup
  • White cumin 1 tsp
  • Red chili flakes  1 tbsp
  • Black pepper 2 tsp
  • Ginger garlic paste 4 tbsp
  • Oil  as required
  • Salt  to taste

Method:

  1. Mix a pinch of yellow color with white vinegar and paste it on chicken.
  2. Now roast the white cumin.
  3. After that take a bowl add yogurt, ginger garlic paste, chopped black pepper, chopped red chilies, white cumin and salt with lemon and leave it for 1 hour.
  4. Now pour water in a pan cook it on low temperature.
  5. Then pour oil keep it on low temperature. When it turns to light brown.
  6. Delicious chargha is ready.
  7. Then pour some oil on charga and simmer it.

Ingredients For Sweet & Sour Shimla Mirch:

  • Capsicum 6-8
  • Tomato ketchup 1 cup
  • Chili garlic sauce 1/2 cup
  • Stock 1 cup
  • Corn flour 2 tbsp
  • Onion  2
  • Pineapple cubes  8 
  • Green chilies 4
  • Soya sauce 1 tbsp
  • White Vinegar 2 tbsp
  • Salt  to taste
  • Brown sugar 2 tbsp
  • Ginger garlic paste 1 tsp
  • Black pepper  1/2 tsp
  • Oil  3 tbsp
  • Sesame seed oil  1 tsp

Method:

  1. Take a pan pour oil add ginger garlic paste.
  2. When it starts to smell then add capsicum, onions and chopped green chilies, fry and take it out.
  3. Then add stock, salt, tomato ketchup, white vinegar, chili garlic sauce, soya sauce, black pepper and brown sugar cook it lightly.
  4. Now add corn flour, pour water.
  5. Then add vegetables cook it for 5 minutes.
  6. Pour sesame seed oil then serve it hot.

Ingredients For Badam Ka Sharbat:

  • Boiled almonds 20
  • Fresh milk  1/2 liter
  • Small cardamom 4
  • Sugar  1 tsp
  • Sugar  1/2 cup

Method:

  1. First chop the small cardamom and sugar.
  2. Now add peeled boiled almonds.
  3. Then pour milk, small cardamom and almonds.
  4. Pour ready sharbat with ice, add chopped almonds.
