Ingredients For Haray Masalay Chicken Pulao:

  • Chicken 1 ( 14 pieces)
  • Rice 2-1/2 cups
  • Green coriander 2 bunches
  • Green chilies 8
  • Garlic 6 cloves
  • Black pepper 1 tsp
  • Lemons  4
  • Chopped onion 4
  • Yogurt 1 cup
  • Ginger garlic paste 1 tbsp
  • Salt to taste
  • Butter 1 tbsp
  • Oil  1 cup

For Stock:

  • Water 2 1/2 cup
  • Onion 1
  • Garlic 1
  • Fennel seeds 1 tsp
  • Coriander seeds 1 tbsp
  • All spices  as required
  • Ginger as required
  • Salt to taste

Method:

  1. Add whole coriander, onion, garlic cloves, salt, ginger and whole garam masala make its stock.
  2. Now pour oil add chopped onions make it golden brown, take it out.
  3. Pour oil in half onions.
  4. After that roast the chicken. Along lemon juice, add chopped black pepper.
  5. Then add stock, boil the stock add rice, salt. pour water simmer it well.
  6. When the steam comes up then add green masala, hara masala ka chicken pulao is ready.
  7. Put fried onions on top of the dish.

Ingredients For Mix Vegetable Handi:

  • Potatoes (cubes) 4
  • Carrots 2
  • Peas 1 cup
  • French beans 8
  • Green chilies 8
  • Green onion 2
  • Oil as required
  • Butter 1 tbsp
  • Red chili flakes 1 tbsp
  • Turmeric 1 tsp
  • Salt to taste
  • White cumin 1 tsp
  • Garlic cloves  6

Method:

  1. Pour oil in a pan add potatoes cubes, take it out and deep fry it.
  2. Make the oil half, then add garlic cloves make it golden brown.
  3. Now add peas, carrot, chopped green onion, green chilies, chopped red chilies, turmeric, salt, french beans and white cumin, roast it well.
  4. After that add butter and fried potatoes simmer it for 5 minutes.
  5. Delicious vegetables handi is ready.

Ingredients For Aloo Ka Raita:

  • Boiled potatoes 3
  • Yogurt 1 kg
  • Fresh milk 1 cup
  • Sugar 2 tbsp
  • Salt to taste
  • Mint leaves 1/2 bunch
  • Corn flour  1 tbsp
  • White cumin 1/2 tbsp
  • Black pepper 1 tsp

For Bigar:

  • Red chili 4
  • White cumin 1/2 tsp
  • Curry leaves few
  • Coriander seeds 4
  • Oil 3 tbsp

Method:

  1. First add boiled potatoes and mash it.
  2. Now take a bowl add yogurt, boiled potatoes, fresh milk, sugar, salt, chopped mint, corn flour, chopped white cumin and chopped black pepper mix it and keep it for a while.
  3. Now pour oil add whole red chilies, add white cumin, curry leaves and methi seeds give it baghar and put it into raita and serve it hot with paratha.
