Vegetable Tahiri by Zarnak Sidhwa

Ingredients:

  • Rice 2 cups
  • Red lentil 1 cup
  • Mixed vegetable 1 cup (Potato, Carrot, Cauliflower, Peas)
  • Green chilies 2
  • Ghee or oil 2 tbsp
  • Bay leaves 2
  • Sugar 1/2 tsp
  • Whole spices 1 tbsp
  • Cumin seeds 1 tsp
  • Onion chopped 1
  • Ginger garlic paste 1 tbsp
  • Red chili 1 tsp
  • Coriander 1 tsp
  • Salt 1 tsp
  • Garam masala 1 tsp
  • Coriander leaves as required
  • Lemon wedges as required

Method:

  1. Wash and drain rice and lentil and leave soaked for few minutes.
  2. Heat oil or ghee and add bay leaves, sugar and mixed whole spiced.
  3. Add cumin followed by onion, ginger garlic paste and green chilies.
  4. When light brown, add chopped vegetables.
  5. Add rice and lentil.
  6. Add some red chili powder, coriander powder, salt and some garam masala powder.
  7. Mix and add water and cook till done.
  8. Squeeze lemon juice and sprinkle coriander leaves before serving.
