Norton Ghost And Chickpea Pulao by Sara Riaz

Ingredients for Norton Ghost:

  • Mutton 1/2 kg
  • Ginger 1 tsp
  • Garlic 1 tsp
  • Red chilli 2 tsp
  • Salt to taste
  • Turmeric powder 1/2 tsp
  • Green peas 250 gm
  • Carrot 1
  • French beans 250 gm
  • Okra 250 gm
  • Cauliflower 250 gm
  • Potato 250 gm
  • Baigan 250 gm
  • Onion 250 gm
  • Spinach 250 gm
  • Soya 1/2 cup
  • Small fenugreek 4 bunch
  • Tomato 250 gm
  • Green chilli 4-5
  • Coriander

Method:

  1. Peel vegetables and cut into pieces.
  2. Heat oil, put finely chopped onion, ginger, garlic, salt, red chilli, turmeric and mutton and roast it.
  3. After it, put water. When mutton is half tendered, so add tomato, spinach, soya and fenugreek leaves and roast it.
  4. In end, put all vegetables and leave for simmer.
  5. Serve with green chillies and coriander leaves.

Ingredients for Chickpea Pulao:

  • White chick peas 250 gm
  • Black chick peas 125 gm
  • Sela rice 125 gm
  • Salt to taste
  • Mix spices 1 tbsp
  • Bay leaf 1
  • black cumin 1/2 tsp
  • Onion 1
  • Yogurt 1/2 cup
  • Red chilli 1 tsp

Method:

  1. Soak white and black chick peas with soda and boil in morning.
  2. Fry onion in hot oil. Together add mix spices, black cumin and bay leaf and roast it.
  3. Now add ginger, garlic, salt, red chilli, yogurt and boiled chick peas and roast it.
  4. Together add water and boil it. Then add soaked rice and salt and keep on simmer on high flame.
  5. Now low the flame and leave for simmer.
  6. When ready serve with raita.
