Special Chinoti Kheer, Mutton Masalay Dar Karahi And Fried Fish by Shireen Anwer

Ingredients for Special Chinoti Kheer:

  • Milk 1-1/2 kg
  • Rice 1/2 cup
  • Khoya 1/2 cup
  • Vanilla custard powder 1 tsp
  • Green cardamom grinded 1 tsp
  • Sugar 3/4 cup
  • Kewra water 1 tsp
  • Almond and pistachio sliced 2 tbsp
  • Silver paper 2
  • Badami Kulfa balls 1 packet

Method:

  1. Firstly, boil milk. Now put soaked rice and stir spoon for 15 minutes until rice tender.
  2. Now add khoya and sugar and stir it.
  3. Then put vanilla custard powder dissolved in milk and cook until the kheer becomes thick.
  4. Now put chopped green coriander and kewra.
  5. In end, take out in dish, sprinkle almonds and pistachio, garnish with silver paper and badami kulfa balls and serve.

Ingredients for Fried Fish:

  • Fish 1/2 kg
  • Chili powder 1 tsp
  • Salt 1 tsp
  • Lemon juice 1 tbsp
  • Egg 1
  • All spice 1 tsp
  • Garlic paste 1 tsp
  • Roasted and crushed cumin 1 tsp

Method:

  1. Wash fish, marinate fish with all ingredients for 2 hours and deep fry in hot oil.

Ingredients for Mutton Masalay Dar Karahi:

  • Mutton 1 kg
  • Tomatoes 1/2 kg
  • Green chillies 8 big ones
  • Salt 1-1/2 tsp
  • Ginger garlic paste 1 tbsp
  • Ginger slice 2
  • Ghee or oil 1/2 cup
  • Coriander leaves 1/2 bunch
  • Chili powder 2 tsp
  • White cumin 2 tbsp

Method:

  1. Firstly, boil mutton in 2 cup water and salt.
  2. Now add ginger garlic paste, cover it and cook for 10 minutes.
  3. Then add chopped tomatoes and green chilies and cover it for 10 minutes.
  4. Now add red chili powder, salt and oil and roast it until mutton tender.
  5. Then put green coriander, chopped ginger and white cumin and serve it with naan.
