Egg Fried Rice, Quick Chocolate Mousse And Chinese Chilli Beef by Zarnak Sidhwa
Ingredients for Egg fried rice:
Water 1 tbsp
Butter 1 tbsp
Vegetable oil 1 tbsp
Onion chopped 1
Cooked white rice 2 cups
Soya sauce 2 tbsp
Ground black pepper 1 tsp Method:
In a small bowl, beat egg with water.
Melt butter in a large skillet over medium low heat.
Add egg and leave flat for 1 to 2 minutes remove from skillet and cut into shreds.
Heat oil in same skillet add onion and saute until soft.
Then add rice, soya sauce and pepper.
Stir fry together for 5 minutes, then stir in egg.
Serve hot. Ingredients for Quick chocolate Mousse:
Chocolate 8 oz
Cold water 3 tbsp
Gelatin 2 tbsp
Egg yolk 2
Caster sugar 3 oz
Cream 1/2 cup
Extra whipped cream to decorate
Grated chocolate to decorate Method:
Melt chocolate and let cool slightly.
Dissolve gelatin in the water and once it is spongy, place pan on low flame and heat till gelatin dissolves.
Combine eggs, egg yolks, sugar and put in a large bowl over a pan of simmering water.
Whisk till mixture is thick and mousse- like.
Add in the dissolved gelatin.
Fold in the cream and mix all well and pour in a serving bowl and chill till set. Decorate with extra cream piped on top with chocolate curls. Ingredients for Chinese Chilli Beef:
Beef (thinly sliced) 250 gm
Garlic 5 cloves
Green chilies 4
Soya sauce 2 tbsp
White pepper powder 1 tsp
Black pepper powder 1 tsp
Sugar 1 tsp
Chicken stock cube 1
Spring onions 2 tbsp
Corn flours as required
Egg 1 Method:
In one bowl, put soya sauce, 1/2 tsp white pepper powder, 1/2 tsp black pepper powder, egg and corn flour and mix it.
Now put sliced beef and leave for 10 minutes. Then heat oil as required and deep fry until golden brown.
Grind green chillies and garlic cloves in grinder.
Heat 1 tbsp oil in pot.
Put paste of green chillies and garlic in it and roast for 30 seconds.
Dissolve chicken stock cube in boil water and add in pan.
Now put remaining black pepper powder, white pepper powder, soya sauce and sugar and cook until boil.
Then put fried beef, cook more for few minutes, when gravy becomes thick, put spring onions and mix it.
Now serve with egg fried rice.
