Coconut Cookies, Chicken Pisa Masala And Punjabi Style Karela by Rida Aftab

Ingredients for Chicken Pisa Masala:

  • 1 kg chicken
  • 1/2 kg tomato
  • 1 tsp mustard
  • 10 whole red chilies
  • 2 tsp cumin
  • 1 tsp turmeric
  • 2 tsp whole coriander
  • 1 piece of ginger
  • 4 Garlic cloves
  • 1 tsp salt
  • 1/2 cup lemon juice
  • 1/2 cup oil
  • Coriander, green chilies as required

Method:

  1. Boil tomatoes and peel it.
  2. After that, grind mustard seeds, whole round chili, cumin and whole coriander finely.
  3. Now grind this masala with tomato, lemon juice, ginger and garlic in blender finely.
  4. Then heat oil and roast masala.
  5. Now add chicken, roast it, put water as required and cook on low flame.
  6. When it is tendered,, turn off the  stove.
  7. In end, sprinkle green coriander and green chilies.

Ingredients for Coconut Cookies:

  • I cup flour
  • 50 grams butter
  • 4 tbsp caster sugar
  • 4 tbsp desiccated coconut
  • 4 tbsp milk
  • 1/4 tbsp soda
  • 1/2 tsp vanilla essence

Method:

  1. Heat butter in one pot, put milk, sugar powder and baking soda and beat it.
  2. Now put vanilla essence, flour and coconut powder and mix it.
  3. Then make round biscuit with hand, press with thumb, grease oven tray and keep all biscuits with gaps.
  4. After that, place in preheated oven for baking on 180 degrees C for 15 minutes.

Ingredients for Punjabi Style Karela:

  • 1 kg bitter gourd
  • 1/2 kg onions
  • 250 grams tomatoes
  • 6 green chilies
  • 2 tsp red chili powder
  • 1 tsp onion seeds
  • 1 tsp cumin
  • 1/2 tsp salt
  • 4 tbsp tamarind pulp
  • 1 tsp turmeric
  • 1 cup oil
  • 1/2 bunch coriander
  • 1 tsp all spice powder

Method:

  1. Cut bitter gourd in round without peeling it, fry in oil and take out.
  2. Now put long onion strips in this oil, fry it lightly and take out.
  3. Then put green chilies, red chili powder, onion seeds, cumin, salt, turmeric and all spice powder in oil.
  4. When fragrance comes, put tomatoes and roast it.
  5. After that, mix bitter gourd and onion.
  6. Put green coriander and tamarind pulp on top and simmer for 10 minutes.
