Neapolitan Chops, Darbari Bhujia And Zeera Kawa by Chef Zakir

Ingredients for Neapolitan Chops:

  • Mutton chops  1/2 kg
  • Oil  2 tbsp
  • Butter 2 tbsp
  • Onion chopped 1
  • Apple chopped  1
  • Button mushroom  1/2 cup
  • Oregano  1/2 tsp
  • Crushed black pepper  1/2 tsp
  • Sesame seeds  1 tbsp
  • Parmesan cheese  25 gm
  • Salt  to taste
  • Parsley chopped  1/4 bunch
  • Ginger chopped  1 medium piece

Method:

  1. First pour oil in a pan, add butter heat it.
  2. Then add chopped ginger, oregano, mutton chops, fry it till the nice color appears.
  3. Then add chopped onion, chopped apple, chopped button mushroom, salt, chopped black pepper, water, sesame seeds and leave it to cook.
  4. Remove its cover after 20 to 25 minutes add parmesan cheese, chopped parsley mix it and then serve.

Ingredients for Darbari Bhujia:

  • Potatoes boiled  3 medium
  • Cauliflower blanched  1 medium
  • Oil  1/4 cup
  • Peas boiled  1/2 tsp
  • Mustard seeds  1/2 tsp
  • Cumin seeds  1 tsp
  • Fennel seeds crushed  1/2 tsp
  • Dry red chilies  3-4
  • Onion chopped  1
  • Green chilies  2-3
  • Turmeric  1/2 tsp
  • Cumin powder  1/2 tsp
  • Coriander powder  1 tsp
  • Chili powder  1/2 tsp
  • Tomatoes boiled  3
  • Curry leaves  few
  • Dry fenugreek leaves  1/2 tsp
  • Coriander leaves  2 tbsp
  • Salt  to taste

Method:

  1. Pour oil in a pan, heat it.
  2. Add mustard seeds, cumin.
  3. Along curry leaves, dry red chili, chopped onions, green chilies cook it till its color becomes bright.
  4. Then add chopped tomatoes, turmeric, cumin, chopped coriander, chopped red chili mix it for 2 to 3 minutes.
  5. Then add boiled cauliflower, boiled potatoes, boiled peas, chopped coriander mix it well simmer it for 1 to 2 minutes.
  6. After simmering it, remove its cover and sprinkle dry fenugreek, then serve.

Ingredients for Zeera Kawa:

  • Cumin seeds  2 tbsp
  • Water  2 glasses
  • Dry red chilies  3
  • Mint leaves  1/4 bunch
  • Salt  to taste
  • Sugar  1 tbsp
  • Lemon juice  1 tbsp

Method:

  1. First pour oil in a pan add cumin and roast it.
  2. Now pour water, crushed cumin in separate pan, let it cook.
  3. Then add dry chilies, mint, salt, sugar, cover it and let it cook.
  4. Mix the lemon juice after 8 to 10 minutes, serve it as hot or cold.
