Soup Noodles, Stir Fry Meat Balls With Peanut Sauce And Thai Style Fried Wings by Chef Gulzar

Ingredients for Stir Fry Meat Balls With Peanut Sauce:

  • Meat balls  as required
  • Chopped coriander  1/2 bunch
  • Red chilies  4
  • Green onion 1-2 sticks

Peanuts sauce:

  • Chopped garlic  1 tbsp
  • Chopped onion  1
  • Red chili  3-4
  • Lemon leaves 2-3
  • Lemon grass  1
  • Red curry paste  1 tsp
  • Coconut milk  1 cup
  • Peanut butter  2-3 tbsp
  • Tamarind paste  3 tbsp
  • Fish sauce  2 tbsp
  • Brown sugar  2 tbsp
  • Lemon grass  1 tbsp
  • Oil  3-4

Method:

  1. For Making Sauce: Heat oil in a big pan and fry chopped onions and chopped garlic.
  2. Now add red chilies, lemon leaves, lemon grass, red curry leaves and cook it for 3 to 4 minutes.
  3. Now add coconut milk, peanut butter, tamarind paste, fish sauce, brown sugar and lemon grass, mix it well and cook for 15 to 20 minutes until sauce becomes thick.
  4. When the sauce becomes thick then remove it from stove and keep it on a side.
  5. Then pour oil in a pan add meat balls and stir fry them, put them in a serving dish.
  6. Pour sauce on top, garnish with green coriander, red chilies, green onion and serve.

Ingredients for Soup Noodles:

For Soup Noodles:

  • Chicken bones 1/2 kg
  • Garlic  5-6 cloves
  • Chopped ginger  1 inch  piece
  • Green onion  3-4 sticks
  • Carrot  1

Chicken balls:

  • Chicken boneless  250 gm
  • White pepper  1 tsp
  • Egg  1
  • Green chilies  4-5
  • Bread crumbs  2 tbsp
  • Baking powder  a pinch
  • Green onion  1/2 cup
  • Salt  to taste

For Garnishing:

  • Boiled noodles  1/2 packet
  • Green onion  2-3 sticks
  • Garlic fried  1/2 cup
  • Garlic  3-4
  • Boiled carrots  1
  • Beans  50 gm
  • Green chilies  8-10
  • Black pepper  1 tsp
  • Red chili flakes  1 tsp
  • Vinegar  1/2 cup
  • Chinese salt  1/3 tsp

Method:

  1. For Making Balls: Add chicken, chopped white pepper, egg, green chilies, bread crumbs, baking powder, finely chopped green onions, salt in a chopper make paste of it nicely.
  2. Now put that balls into boiling water and boil it for 4 to 5 minutes.
  3. Then take it out from water and keep it on a side.
  4. Chicken balls are ready.
  5. For Making Soup: Now put the chicken bones, carrot, garlic cloves, ginger cloves, green chilies, water and leave it for 2 to 3 hours.
  6. Soup is ready.
  7. For Garnishing: Heat the oil in a pan, add garlic cloves for frying.
  8. When the garlic starts to turn in golden brown, add stock and give bhagar.
  9. Then add boiled carrots, beans cook it for 3 to 4 minutes.
  10. Then add packet of noodles, then add chicken balls.
  11. Put chopped garlic, chopped red chilies, green chilies, vinegar mixture, chinese salt, salt pour soup in end.
  12. Now garnish with green onions and serve.
  13. Thai soup noodles is ready.

Ingredients for Thai Style Fried Wings:

  • Chicken wings  1/2 kg
  • Ginger garlic paste  1 tbsp
  • Soya sauce  2 tbsp
  • Corn flour  2-3 tbsp
  • Black pepper  1 tsp
  • Egg white  2-3
  • Fish sauce  1 tbsp
  • Oyster sauce  1 tbsp
  • Oil  to fry
  • Salt  to taste

Method:

  1. Put the ginger garlic paste, soya sauce, corn flour, chopped black pepper, egg white, oyster sauce, fish sauce, salt, mix it well and marinate the chicken wings.
  2. Then heat oil on medium flame, deep fry the chicken wings and take it out in a wings and serve.
