Baked Cheese Cake, Steak Sandwich And Cream Of Chicken Soup by Zarnak Sidhwa

Ingredients for Baked Cheese Cake:

  • Plain biscuits crumbs  1-1/2 cups
  • Ground cinnamon  1/4 tsp
  • Melted butter  1/3 cup
  • Ground walnuts  1/2 cup

For Filling:

  • Cream cheese  600 gm
  • Sugar  1-1/3 cups
  • Eggs  5
  • Cream  16 ounces
  • Lemon juice  1 tbsp
  • Flour  1/4 cup
  • Vanilla essence  2 tsp

METHOD:

  1. For Crust: Combine the plain biscuit crumbs, ground walnuts and cinnamon in a bowl. Mix in melted butter.
  2. Press the crumb into a greased 9 inch spring form tin.
  3. Press the crumb mixture into the bottom of the pan and about 2/3 the way up the side.
  4. Put the crust in your freezer until the filling is done.
  5. For filling: Beat the cream cheese until light and fluffy.
  6. Add the sugar a little at a time and continue beating until creamy.
  7. Add one egg at a time and beat after each egg.
  8. Add flour, vanilla and lemon juice, mix well.
  9. Add the cream and beat well.
  10. Pour cream cheese mixture into the spring form pan.
  11. Bake at 180 degrees in a preheated for one hour and 15 minutes.
  12. When time is up, turn oven off, leave in oven for one hour.
  13. Remove from oven and let cool then refrigerate overnight.

Ingredients for Cream Of Chicken Soup:

  • Milk  4 cups
  • Flour  2 tbsp
  • Oil  2 tbsp
  • Caster sugar  2 tbsp
  • Cooked chicken  2 cups
  • Salt  1/2 tsp
  • Black pepper  1/2 tsp
  • Garlic crushed  2-3 cloves

Method:

  1. Heat oil.
  2. Gradually stir in flour.
  3. Let this form a paste, or roux.
  4. Then, gradually stir in the milk and continue stirring until thickened.
  5. Add chicken to white sauce mixture.
  6. Add sugar, salt, pepper, and crushed garlic.
  7. Mix well and simmer for 20 minutes over low heat.
  8. If soup is not as thick as desired, mix a small amount of corn flour a small amount of water and add to soup.
  9. Simmer for 10 minutes.

Ingredients for Steak Sandwich:

  • Salt  1 tsp
  • Black pepper 1 tsp
  • Garlic  2-3 cloves
  • Beef undercut  250 gm
  • Worcestershire sauce  1 tbsp
  • Oil  2 tbsp
  • Onions  2
  • Mustard paste  1 tsp
  • Mayonnaise  1 tbsp
  • Cheese slices  as required
  • Bread or buns  as required

Method:

  1. Marinate the steak strips with salt, crushed garlic, crushed black pepper and half the worcestershire sauce and let stand for a while. Heat oil and stir fry for a while and remove in a bowl when done.
  2. In a pan, heat oil and add the thickly sliced onions, let caramelize and turn golden.
  3. Add some worcestershire sauce and remove in a bowl.
  4. Spread some mustard and mayonnaise on bread or rolls and pile with the onions and steak strips, put a cheese slice and top with the other bread and serve immediately.
