MUSHROOM RICE WITH OMELET TOPPING

INGREDIENTS:

  • Boiled Sela rice: 500 gm
  • Boneless chicken: 200 gm
  • Chopped garlic: 3-4
  • Mushrooms: 1 cup
  • Chopped cabbage: 1/2 cup
  • Green chilies: 5-6
  • Black pepper: 1tsp
  • Crushed red chili: 1 tsp
  • Cumin seeds: 1 tsp
  • Mustard seed: 1 tsp
  • Eggs: 3-4
  • Spring onion: 4 strands
  • Chopped coriander: 1/2 cup
  • Soya sauce: 2/3 tbsp
  • Brown sugar: 1/2 tsp
  • Oil: 3/4 tbsp
  • Salt: to taste

METHOD:

In a mixing bowl add eggs, spring onions, chopped coriander, salt and black pepper and stir to make omlete.
  1. Hard boiled the sela rice.
  2. Now in a frying pan heat oil and fry ginger garlic paste, red chili powder, mustard seeds, cumin seedsa and green chilies for 1 minute.
  3. Now add boiled chicken and mushrooms and cook for 2 minutes.
  4. Now add cabbage, soya sauce, brown sugar and cook all together
  5. Dish out in a bowl and serve with topping of omlete.

                   CHICKEN TOAST

INGREDIENTS:

  • Chicken mince: 500 gm
  • Ginger garlic: 2 tbsp
  • Bread slices: 10-12
  • Red chili powder: 1 tbsp
  • Black pepper: 1 tsp
  • Egg: 1
  • Oil: for fry
  • Salt: to taste
FOR GARNISHING:
  • Letuce leaves: 4-5
  • Tomatoes: 1-2

METHOD:

  1. In a chopper add chicken mince, red chili powder, black pepper, ginger garlic, egg and salt and blend to make a paste.
  2. Now spread this paste on bread and cut into sghape of your own choice.
  3. Now deep fry them in a oil.
  4. Serve with lettuce leaves and tomatoes.

                   FRUITY MUFFINS

INGREDIENTS:

  • Fruit chunks: as required
  • All purpose flour:250 gm
  • Eggs: 4
  • Butter: 250 gm
  • Baking powder: 2 tsp
  • Icing sugar: 2 cup
  • Milk: as required
  • Vanilla essence: 1 tsp

METHOD:

  1. In a mixing bowl add eggs and icing sugar and mix well.
  2. Now add butter, baking powder, vanilla essenece and mix well.
  3. Then add all purpose flour and milk and fold with spoon.
  4. When batter becomes smooth add fruit chunks in it and mix.
  5. Now bake for 25-30 mintes at 200C.
