Coconut Brownies, Dry Chilli Chicken And Vegetable Manchurian by Zarnak Sidhwa

Ingredients for Coconut Brownies:

  • Butter, softened 1 cup
  • Sugar 2 cups
  • Eggs 4
  • Vanilla essence 1 tsp
  • Flour 1-1/2 cups
  • Cocoa powder 1/2 cup
  • Desiccated coconut 1/2 cup

Method:

  1. Beat butter and sugar ad sugar and add the eggs, add vanilla essence, flour and cocoa powder and mix in coconut, spread in13 x 9 inches greased pan and bake at 180 degrees C for 20 minutes or till a skewer inserted in center comes with moist crumbs, do not over bake the brownie or it will turn into a cake.
  2. Cool and serve cut in squares.

Ingredients for Dry Chilli Chicken:

  • Boneless chicken 1 kg
  • Soya sauce 2 tbsp
  • Green chili sauce 2 tbsp
  • Salt 1 tsp
  • Black pepper 1 tsp
  • Green chilies chopped 3-4
  • Chopped garlic 1 tbsp
  • Corn flour 1 tbsp

Method:

  1. Marinate the chicken in soya sauce, egg, salt, flour, corn flour, half garlic and green chili sauce for 1 hour.
  2. Fry the chicken pieces till they are brown and keep them on kitchen paper to absorb the excess oil.
  3. Now in the same oil add chopped garlic, green chilies, fry for 2 minutes, now add fried chicken, onion and capsicum.
  4. Saute on high flame, add all the half ingredients salt, pepper, soya sauce, and green chili sauce.
  5. Add  1/2 tsp vinegar. Serve hot with fried rice or noodles.

Ingredients for Vegetable Manchurian:

  • Cabbage grated 2 cups
    Carrots grated 2  cups
    Onion chopped 1
    Ginger garlic paste 1 tbsp
    Flour 2 tbsp
    Oil for frying
    Soya sauce 1 tbsp
    Salt to taste
    Black pepper powder 1 tsp
    Sugar 1 tsp
    Corn flour 1 tbsp
    Oil 2 tbsp
    Chopped coriander to serve

Method:

  1. Mix grated cabbage and carrots and squeeze the water out from them.
  2. Mix 2 tbsp flour and little salt to it. Make small balls of the mixture.
  3. Heat the oil and deep fry the balls till golden brown, drain and keep aside.
  4. Now in a separate pan heat 2 tbsp oil.
    Saute ginger garlic paste, green chilies and onions.
  5. Add water, salt, pepper powder, sugar, and soya sauce.
  6. Bring it to a boil. Mix 1 tbsp corn flour with half of a cup of cold water and stir into it.
  7. Gently add the fried balls to the gravy.
  8. Cook the vegetable manchurian for 3-4 minutes and serve hot garnished with chopped coriander.
