Lagni Fish, Handi Achari Chops, Oreo Muffins And Hot Butter Caramel Espresso by Shireen Anwer

Ingredients For Handi Achaari Chops:

  • Mutton chops  1 kg
  • Tomato 250 gm
  • Onion 1
  • Ginger garlic 2 tbsp
  • Onion seeds 1/2 tsp
  • Cumin roasted  1 1/2 tsp
  • Coriander seeds 1 tsp
  • Lemon juice 2 tbsp
  • Green chilies 6 whole
  • Anise seeds 1 1/2 tsp
  • Kasoori methi 1 tsp
  • Fenugreek seeds 1/4 tsp
  • Oil 1/2 cup
  • Salt 1 1/2 tsp
  • Chili powder  2 tsp
  • Turmeric 1/2 tsp

Method:

  1. First add fennel, roasted cumin, roasted coriander, kalonji and fenugreek.
  2. Now pour oil add chopped onions fry it for 5 minutes.
  3. Then add ginger garlic paste, tomatoes, salt, chopped red chilies and turmeric fry ti well.
  4. Now add mutton chops, half cup water, until the chops are tendered well when it is tendered well.
  5. Then add chopped tomatoes, lemon juice and whole green chilies, simmer it well, until the oil starts to comes up.

Ingredients For Lagni Fish:

  • Fish whole 1 to 1 1/2 kg
  • Lemon juice 1/4 cup
  • Salt 1 tsp
  • Oil 1/4 tsp
  • Curry leaves 20
  • Fenugreek seeds 1/2 tsp
  • Ginger garlic 1 tbsp
  • Turmeric 1/2 tsp
  • Chili powder 1 1/2 tsp
  • Coriander 1 tsp
  • Cumin 1 tsp
  • Allspice 1 tsp
  • Tomatoes 2
  • Black pepper 1/2 tsp
  • Yogurt 1/2 cup
  • Tamarind pulp 2 tbsp
  • Coriander leaves 2 tbsp
  • Green chilies 2 chopped

Method:

  1. First take a pan pour milk, give cuts on fish, both sides.
  2. Now wash it and dry.
  3. Then add salt and lemon juice for marinating it for 30 minutes.
  4. Now pour oil add curry leaves, fenugreek seeds, ginger garlic paste, turmeric, chopped red chilies, chopped coriander, cumin, chopped garam masala and black pepper chopped tomatoes.
  5. After that pour yogurt, fry the and take it out.
  6. Then add tamarind paste, green chilies and green coriander.
  7. Now take the rectangular big piece, put on the oven tray, chopped masala put fish on its top.
  8. Then spread anothe masala on its top then close it.
  9. Now bake it in oven for 30 minutes.
  10. After that open the foil and bake it again, until water dries and oil starts to comes up.
  11. Add lemon slices and green coriander then serve.

Ingredients For Oreo Muffins:

  • Flour 1 3/4 cup
  • Baking powder 2 tsp
  • Salt 1/2 tsp
  • Oreo cookies 8 to 10
  • Sour cream 1/2 cup
  • Egg 1

Method:

  1. First add flour and baking powder filter it.
  2. Now take a bowl add milk, caster sugar, cream and melted butter beat it for 2 minutes.
  3. Then fold it into filtered mixture, along oreo cookies, fold it and cup cakes lines, bake it on 180 degree C for 20 minutes.

Ingredients For Hot Butter Caramel Espresso:

  • Brown sugar 1 tbsp
  • Softened butter 1 tbsp
  • Hot water 1 tsp
  • Milk 1 cup
  • Caramel syrup 1 cup
  • Caramel syrup 4 tbsp
  • Coffee matte 3 tbsp
  • White chocolate chips 2 tbsp
  • Coffee 1 tbsp

Method:

  1. First pour milk add white chocolate chips and butter cook it for 5 minutes.
  2. Now put the coffee matte, coffee and caramel syrup blend it well.
  3. Then serve it with swirl of fresh cream in mug.
