Fish Koftay, Hyderabadi Chicken Ginger And Achari Sabzi by Zubaida Tariq

Ingredients For Fish Koftay:

  • Fish 1 kg
  • Salt 1 tsp
  • White vinegar 1 tsp
  • Garlic 1-2 cloves

To Make Fish Balls:

  • Red chili 1 tsp
  • Black pepper 1 tsp
  • Cumin powder  1 tsp
  • Green chilies 4
  • Chopped coriander 1 bunch
  • Mint leave 1/2 bunch
  • Salt to taste
  • Lemon 2
  • Chopped onion 1
  • Egg 1

For Gravy:

  • Chopped onion  1
  • Ginger garlic paste 1 tbsp
  • All spice powder 1/2 tsp
  • Yogurt 1/2 cup
  • Red chili 1 tbsp
  • Turmeric 1 tsp
  • Coriander powder 1-1/2 tbsp
  • Green coriander 1 bunch
  • Green chilies 2
  • Oil  1 cup

Method:

  1. First remove the skin of surmai fish, take out fish bone from center and make its pieces.
  2. Now mix salt, white vinegar and garlic with this pieces, leave it for 15 minutes and wash it.
  3. Now heat it on low temperature.
  4. Add white vinegar and salt on fish again, remove it when its color changes to white.
  5. Then take a bowl add fish pieces, make bahrta from bones.
  6. Now add all masala knead it, make small koftas.
  7. After that pour oil add chopped onions make it golden brown, spread it on paper, so that it becomes crispy.
  8. Then take a bowl add yogurt, ginger garlic paste, turmeric, chopped garam masala and chopped red chilies.
  9. Along chopped onions and roast it.
  10. Now take a frying pan fry the kofta, so that they become thin.
  11. After that shake the pan don't stir it.
  12. When oil starts to separate, then pour water simmer it on low temperature and add chopped green coriander and chopped green chilies.
  13. When oil starts to comes up then serve the ready koftas with white rice.

Ingredients For Hyderabadi Chicken Ginger:

  • Chicken boneless 1/2 kg
  • Onion paste 2
  • Green chilies 6
  • Curry leaves few
  • Oil 1 cup
  • Tamarind paste 1/2 cup
  • Turmeric 1 tsp
  • Red chili flakes  1 tbsp
  • Ginger garlic paste 1 tbsp
  • Coriander seeds 1 tbsp
  • Poppy seeds 1 tbsp
  • Chopped ginger 2 tbsp
  • Sesame seeds 2 tbsp
  • White cumin  1/2 tbsp
  • Salt  to taste

Method:

  1. First take a whole coriander, white cumin, raisins and white sesame seed roast it lightly.
  2. Now take a pan pour oil add chopped onions make them brown.
  3. Then add chicken, ginger garlic paste, salt and turmeric.
  4. When the chicken dries then roast it lightly with red chilies, roasted and chopped masala, green chilies, curry leaves and tamarind paste, simmer it on low temperature.
  5. When oil starts to comes up then add ginger garlic paste simmer it for 5 minutes.
  6. Delicious hyderabadi chicken ginger is ready.

Ingredients For Achari Sabzi:

  • Cauliflower 1
  • Peas 1 cup
  • Potatoes 4
  • Green chilies 8
  • Carrots 1
  • Green beans 6
  • Curry leaves few
  • Turmeric 1 tsp
  • Red chili flakes 2 tbsp
  • Mustard seeds 2 tbsp
  • White cumin 1 tsp
  • Nigella seeds 1 tsp
  • Salt to taste
  • Fenugreek seeds 8
  • Lemons  4
  • Mustard oil 1 cup

Method:

  1. First add cabbage keep it separate add potatoes boil it lightly and make its cubes.
  2. Now take a pan, pour oil add fenugreek seeds.
  3. When it starts to smell then add cabbage, peeled peas, green chilies, small pieces of carrot and green beans, curry leaves.
  4. Add potatoes for frying, along mustard seeds, salt chopped red chilies, white cumin, kalonji and turmeric cover and cook it on low temperature.
  5. When the vegetables are tendered then add lemon juice simmer it for 5 minutes.
  6. Delicious acahari Sabzi is ready.
