Kabuli Pulao Platter, Creamy Stick Kulfi And Lahori Fried Fish by Shireen Anwer

Ingredients For Creamy Stick Kulfi:

  • Milk 1 kg
  • Corn flour 3 tbsp
  • Milk powder 5 tbsp
  • Sugar 1/2 cup
  • Green cardamom 1/2 tsp
  • Almonds  2 tbsp
  • Pistachio 2 tbsp
  • Coconut desiccated  2 tbsp

Ingredients For Kabuli Pulao Platter:

  • Sela rice 750 gm
  • Mutton 1/2 kg
  • Ginger garlic 1 tsp
  • Salt 1 tsp
  • Water 2 cups
  • Black cardamom 2
  • Black pepper 10
  • Cinnamon 1
  • White cumin 1 tsp
  • Oil 1/2 cup
  • Sugar 3 tbsp
  • Salt  1 1/2 tsp
  • Raisins 4 tbsp
  • Carrot 1
  • Brown onion 1/2 cup

Method:

  1. First take a mutton add ginger garlic paste, salt and water boil it, until it is tendered well.
  2. Now pour oil add fried onions with boiled mutton fry it make it golden brown, then keep it on a side.
  3. For making rice, pour oil add sugar make it caramelized, until it becomes light golden.
  4. Now pour water, salt, rice, cook it on low temperature, until they are boiled and water dries.
  5. Now add boiled black cardamom, chopped black pepper and cinnamon mix and simmer it.
  6. Then take a pan pour oil add raisins for frying.
  7. Now add sugar cook it lightly.
  8. Now add carrot slices for frying and take it out.
  9. Then for assembling take a boiled rice, put boiled mutton.
  10. Now sprinkle carrot and raisins.

Ingredients For Lahori Fried Fish:

  • Fish 1/2 kg
  • Salt 1 tsp
  • Red pepper crushed 1 tsp
  • Ginger garlic paste 1 tsp
  • Roasted and crushed coriander 1 1/2 tsp
  • Roasted and crushed cumin 1 tsp
  • Turmeric 1/2 tsp
  • Pomegranate seeds crushed 1 tsp
  • Yellow color pinch
  • Ajwaien 1/2 tsp
  • Lemon juice 1/4 cup

Method:

  1. Take a bowl add salt, chopped red chilies, ginger garlic paste, roasted and chopped coriander, roasted and chopped cumin, turmeric, pomegranate seeds, pinch of yellow color and lemon juice mix it well.
  2. Now add fish marinate it with this mixture for 2 hours.
  3. Then fry it in frying pan, until it becomes ready.
  4. Sprinkle chaat masala.

Ingredients For Cinnamon Hot Chocolate:

  • Milk 1 cup
  • Malt powder 2 tbsp
  • Cinnamon 1/4 tsp
  • Whipped cream for decoration
  • Marshmallows 1 cup
