Machli Muthiya, Memoni Sweet And Dhokri With Curry by Shireen Anwer

Ingredients For Machli Muthiyan:

  • Spinach 200 gram
  • Fenugreek leaves 4 bunches
  • Dill 1/2 bunch
  • Potatoes 4
  • Carrot 3
  • Peas  1 cup
  • French beans 100 gm
  • Brinjal 2
  • Tomatoes  4
  • Onion 2 sliced
  • Oil  1 cup
  • Chili powder  3 tsp
  • Coriander powder  3 tsp
  • Cumin powder 2 tsp
  • Salt  2 tsp
  • Garlic paste  2 tsp
  • Turmeric  1/2 tsp
  • Whole green chilies  6
  • Coriander leaves  1/2 cup

Ingredients For Muthiyan:

  • Millet flour 500 gm
  • Ghee 1 cup
  • Green chili paste 1 tsp
  • Coriander 1 tsp
  • Chili powder 1/2 tsp
  • Salt 1/2 tsp
  • Coriander powder  1/2 tsp
  • Turmeric  1/2 tsp
  • Warm water  to knead as required

Method:

  1. Pour oil in a pan heat it, add onions make them golden brown.
  2. Then add chopped fenugreek cook it for 2 minutes. then add garlic paste.
  3. After that add all masala, tomatoes fry it lightly.
  4. Then add spinach, potatoes, carrot, peas, brinjal, peas cover and let it cook for 20 minutes.
  5. Now add water, when the mixture starts boiling then add muthiya, chopped soya, whole green chilies, brinjal simmer it for 10 to 15 minutes.
  6. For making Muthiya:
  7. Add bajray ka ata, salt, ghee in a bowl.
  8. Now add green chili paste, chopped green coriander, chopped red chilies, chopped coriander, turmeric, warm water knead it well cover and let it cook for 10 to 15 minutes.
  9. Now make muthiyan and use it

Ingredients For Dhokri With Curry:

  • 2 cup gram flour
  • Salt 1 tsp
  • 2 cup water
  • 2 tbsp oil
  • 1 tsp cumin seeds
  • 1/2 tbsp red chili powder
  • 1 tsp turmeric
  • 1/2 tbsp coriander powder
  • Cubic green chilies
  • 1 cup fresh coriander and mint
  • 1 small chopped onion
  • 3 tomatoes
  • 1 tsp chili powder
  • 1/2 tsp turmeric
  • 1 tsp coriander powder
  • as required salt

For Gravy:

  • 1 tsp lemon juice
  • 1 cup coconut milk

Method:

  1. First pour water in a pan boil it.
  2. Now add salt, cumin, oil, chopped red chilies, turmeric, chopped coriander cook it for 7 to 8 minutes.
  3. Now add gram flour in a pan stir fry it fast.
  4. Now take it out from pan and leave it for a while.

For Gravy:

  1. Add chopped onions make them brown saute it.
  2. Then add tomatoes, cook it for 5 minutes.
  3. Now add chopped red chilies, turmeric, chopped coriander, salt, lemon juice and make its gravy thick.
  4. Now add coconut milk simmer it.

Ingredients For Memoni Sweet:

  • China grass 3 packets
  • Water  3 cups
  • Assorted food colors as required
  • Sugar  10 tbsp

Method:

  1. First Add water, sugar boil it well.
  2. Now add china grass and saturate it.
  3. When it is saturated well then take a syrup in a cup and add assorted food.
  4. Then cool it and place it in fridge for  half an hour.
  5. Delicious memoni sweet is ready.
