Noratan Chicken Biryani, Phal Chops And Mavay Ki Kachori by Shireen Anwer

Ingredients For Phal Chops:

  • Chops 1/2 kg
  • Onion  2
  • Coriander leaves 1/2 cup
  • Green chilies  8
  • Ginger garlic 1 tbsp
  • Black pepper whole 1 tbsp
  • Yogurt  1 cup
  • Lemon juice 2 tbsp
  • Salt 1 tsp
  • Oil  1/4 cup

Method:

  1. Put onion slices, green coriander, green chilies, ginger garlic, whole black pepper, yogurt, lemon juice and salt blend it well.
  2. Now marinate the chops for 2 hours.
  3. Then pour oil grind it well for 5 minutes, until it becomes brown.
  4. Now add chops and fry it well.
  5. Then pour water cover and let it cook, until the chops are tendered well.
  6. Serve it with french fries.

Ingredients For Noratan Chicken Biryani:

  • Chicken 1 kg 12 pieces
  • Rice  750 gm
  • Peas  1/2 cup
  • Baby potatoes 15 boiled
  • Carrot  2
  • Coriander leaves  half bunch
  • Mint leaves  half bunch
  • Saffron 1/4 tsp
  • Yellow color 1/4 tsp
  • Boiled eggs 2 for garnishing
  • Ginger garlic 2 tbsp
  • All spice 1-1/2 tsp
  • Brown onion 1 cup
  • Chili powder  3 tsp
  • Salt  1 1/2 tsp
  • Yogurt 1 1/2 cup
  • Green chilies 8
  • Oil 1 cup
  • Milk  1 cup

Method:

  1. First add green coriander and mint chop it and mix it well.
  2. Then add rice with garam masala and salt boil it till becomes cook. Now take out its water and keep it on a side.
  3. Put chicken pieces, fried onion, yogurt, green masala, garam masala, chopped red chilies, salt and ginger garlic paste for marination leave it for 30 minutes.
  4. Then add marinated chicken wash it and put the rice.
  5. Put green chilies, garam masala, green coriander, mint and boiled carrot.
  6. Now make layer of rice, put boiled potatoes, remaining onion, peas.
  7. Then put remaining rice, saffron, pinch of yellow color, milk mixture, cook it for 35 to 40 minutes, until the chicken tenders.
  8. Now mix it well then serve.

Ingredients For Mavay ki Kachori:

For Filling:

  • Khoya 1 cup
  • Caster sugar 4 tbsp
  • Almonds and pistachio  3 tbsp
  • Cardamom powder  1 tsp
  • Oil and ghee  for deep frying

For Kachori Covering:

  • Flour 2 cups
  • Gram flour 1 tbsp
  • Ghee  3 tbsp
  • Water  to knead

For Syrup:

  • Water 1 cup
  • Sugar 1 cup
  • Saffron  1/2 tsp

Method:

  1. For filling take khoya, caster sugar, almonds and pistachio, chopped cardamom.
  2. Now pour water and saffron make its syrup.
  3. Then take a bowl add flour, gram flour and ghee, knead its dough, cover it and leave it for 15 minutes.
  4. Now make 12 portions, do fillings in each portion.
  5. Then pour oil then fry the kachori on low temperature take it out and add syrup then serve.
