Fruity Chicken, Arabic Meat Stew And Jodpuri Rice by Chef Zakir

Ingredients For Arabic Meat Stew:

  • Mutton boneless  1/2 kg
  • Spring onion 2
  • Carrot 2
  • Capsicum 2
  • Big green chilies 4-5
  • Potatoes  2
  • Peas boiled  1 cup
  • Tomato puree 125 gm
  • Ginger garlic paste 1 tbsp
  • Salt  to taste
  • White pepper powder 1/2 tsp
  • Black pepper powder 1/2 tsp
  • Onion  1
  • Oil 1/4 cup
  • Semolina  125 gm

Method:

  1. Pour oil in a pan add onions.
  2. When it changes its color add mutton, ginger garlic paste, salt, chopped black pepper, chopped white pepper, tomato puree and water cover and let it cook.
  3. Now take a bowl add semolina, oil, salt, black pepper mix it well.
  4. Now pour water in a pan, add semolina mixture cook it on low temperature for 5 to 8 minutes.
  5. When water dries then cook it more for two to three minutes then turn off the stove.
  6. When it is tendered then add carrot, capsicum, green chilies, chopped potatoes and boiled chickpea.
  7. When all vegetables are tendered then add green onion, mix it and turn off the stove.
  8. Keep it in mind that gravy should not be too much.
  9. Now spread it on serving dish, after that spread the mixture then serve it hot.

Ingredients For Jodhpuri Rice:

  • Cauliflower boiled 1/4 piece
  • Capsicum  1
  • Cabbage 1/4 piece
  • Peas 1 cup
  • Tomatoes 4
  • Ridge gourd 2
  • Bottle gourd  1 
  • Onion  1
  • Oil  1/4 cup
  • Coriander leaves  1/4 bunch
  • Mint leaves  1/4 bunch
  • Green chilies 3-4
  • Tomato paste 4 tbsp
  • White beans  1 cup
  • Oil 1/4 cup
  • Cumin seeds 1 tbsp
  • Rice  300 gm
  • Water  1 1/4 glass
  • Salt to taste
  • Turmeric  1 tsp
  • Crushed red pepper  1 tsp
  • Cumin powder  1 tsp
  • All spice powder 1/2 tsp
  • Ginger garlic paste  1 tbsp

Method:

  1. First pour oil add ginger garlic paste, capsicum, cabbage, tomatoes, ridge gourd, bottle gourd, onion, green coriander, mint, green chilies chop it well.
  2. Along white beans and peas.
  3. After roasting, add turmeric, red chilies, chopped cumin, chopped garam masala, salt and tomato paste along water cover and leave it to cook.
  4. Now pour oil add whole cumin fry it well.
  5. Then add water, rice and salt.
  6. When all the rice comes up then simmer it for 8 to 10 minutes.
  7. Then remove the cover of vegetables keep its temperature high mix it well.
  8. When it becomes dry then take out the rice on plater, take out the vegetables on side, then serve.


Ingredients For Fruity Chicken:

  • Chicken boiled 300 gm
  • Mango 1
  • Banana 1
  • Lemon juice 1 tbsp
  • Sour cream 2 tbsp
  • Mayonnaise 4-5 tbsp
  • Apple  1
  • Peas boiled  1/2 cup
  • Ice berg  half
  • Salt  to taste
  • Crushed black pepper 1 tsp

Method:

  1. First add chicken cubes boil it.
  2. Now add mango, apples peel their skin and make small cubes.
  3. Take a bowl mix salt, chopped black pepper and lemon juice.
  4. Then add small cubes of banana. add ice berg, boiled peas, cream, mayonnaise, mix it well.
  5. Keep it in fridge and serve it cool.
