Chicken Chaska, Salsa, Paneer Toasted Sandwiches And Till Cheeki by Zarnak Sidhwa

Ingredients For Chicken Chaska:

  • Boneless chicken 1 kg
  • Oil  few drops
  • Butter  4 tbsp

For Paste:

  • Ginger 4 tbsp
  • Carom seeds  1/4 tsp
  • Cumin seeds  1/2 tsp
  • Garam masala  1/4 tsp
  • Lemon juice  1 tsp
  • Curd  4 tbsp
  • Green onion  2 tbsp

For Tawa Fry Vegetable:

  • Oil  2 tbsp
  • Cabbage  1 cup
  • Carrots  1/2 cup
  • Salt  as per taste
  • Black pepper  as per taste
  • Garlic  1 tsp

Method:

  1. For Chicken: Cook chicken on a hot tawa with few drops of oil and butter.
  2. Make a paste of the ingredients mentioned in a grinder.
  3. Then add this paste to the chicken on the tawa, and cook till chicken is done.
  4. Remove from heat and serve with tawa fry vegetables.
  5. For Tawa Fry: Vegetables heat oil on a tawa.
  6. Add all the vegetables, salt, black pepper and roasted garlic Stir fry.

Ingredients For Salsa:

  • Tomato 1
  • Spring onion  1
  • Capsicum  1/4 piece
  • Corn  2 tbsp
  • Green chilies  3-4
  • Salt  to taste
  • Fresh coriander  a small
  • Tomato ketchup  3 tbsp
  • Lemon  1
  • Raisins  2 tbsp

Method:

  1. In a bowl, add tomato, spring onions, capsicum, corn, green chilies, salt, coriander, tomato ketchup, lemon juice and raisins.
  2. Mix them all together and serve your salsa with paneer toasted sandwiches.

Ingredients For Paneer Toasted Sandwiches:

  • Cottage cheese 1 cup
  • Butter  1 tbsp
  • Cumin seeds  1 tsp
  • Onion  1 large
  • Green chilies  2
  • Tomato  1 medium
  • Turmeric powder 1/4 tsp
  • Red chili powder  1/2 tsp
  • Bread  4 slices
  • Salt  to taste

Method:

  1. Heat butter in a pan, add cumin seeds.
  2. When they stop spluttering add green chilies and onion.
  3. Fry till golden brown.
  4. Add tomatoes, turmeric powder, red chili powder and salt to taste.
  5. Stir well.
  6. Add paneer and mix well. Stir fry for 3-4 minutes.
  7. Put paneer mixture on 2 of the slices.
  8. Spread to cover entire slice.
  9. Top with the remaining slices.
  10. Grill or toast the sandwich till crispy and golden serve hot with salsa.
