Sharmiley Rice, Bohri Chicken And Chana Fried Tikya by Chef Zakir

Ingredients For Sharmiley Rice:

  • Chicken boneless 1/2 kg
  • Rice 1/2 kg
  • Yogurt 125 gm
  • Red chili powder 1 tbsp
  • All spice powder 1 tsp
  • Cumin  1 tsp
  • Whole all spices  few
  • Turmeric 1 tsp
  • Ginger garlic paste 2 tbsp
  • Coriander mint leaves 1/4 bunch
  • Tomatoes 2-3
  • Lemon sliced 2-3
  • Flour  1 kg
  • Water  as required
  • Salt  as required
  • Oil  1/4 cup

Method:

  1. First knead the flour with with salt and water and keep it on a side.
  2. Now pour oil in a pan add ginger garlic paste.
  3. When it is cooked then add boneless chicken cubes.
  4. When it turns to golden color then turn off the stove.
  5. Take a bowl add yogurt, chopped red chilies, chopped garam masala, turmeric and chopped cumin mix it with chicken.
  6. Along salt turn on the stove and roast it.
  7. When masala is nicely cooked then turn off the stove.

Ingredients For Chana Fried Tikya:

  • White gram  1-1/2 cup
  • Capsicum  half
  • Onion 1
  • Tomato  1
  • Coriander, mint leaves few
  • Green chilies  3-4
  • Salt  as required
  • Crushed red chili 1/2 tsp
  • Whole cumin 1/2 tsp
  • Coriander powder 1/2 tsp
  • Dry mango powder  1/2 tsp
  • Egg 1
  • Gram flour 3 tbsp
  • Oil  for frying

Method:

  1. First boil the white chickpea and chop it.
  2. Now add capsicum, onion, tomatoes and green chilies chop it well.
  3. Then add whole cumin, chopped coriander, chopped red chilies, salt, dry mango powder, egg and gram flour mix it well.
  4. Now make the kabab of mixture.
  5. When all kababs becomes ready then pour oil and fry them in hot oil.
  6. Then serve the kababs with chatni or ketchup then serve.

Ingredients For Bohri Chicken:

  • Boneless chicken 1/2 kg
  • Fresh cream 1/4 cup
  • Ginger garlic paste 2 tbsp
  • Sized onion  1
  • Green chilies 2-3 chopped
  • Lemon juice 2 tbsp
  • Oil  1/4 cup
  • Black pepper 1/2 tsp
  • Chopped almonds 25 gm
  • Butter  2-3 tbsp
  • Salt  as required

Method:

  1. First pour oil add chopped onions make it red.
  2. Then add ginger garlic paste and green chilies cook it for few minutes.
  3. Then add chicken, chopped black pepper, salt and water mix it and cover and let it be on simmer.
  4. Now take a separate pan add butter, almonds, stir fry it.
  5. When the almonds are lightly cooked then keep them on a side.
  6. When the chicken is tendered then add fresh cream and lemon juice roast it lightly.
  7. When the oil starts to comes up then take it out in a dish.
  8. Spread the fried almonds on its top.
