Handi Hotpot, Lemon Herbed Grilled Fish And BBQ Wings by Shireen Anwer

Ingredients For BBQ Wings:

  • Chicken wings 1 kg
  • Crushed garlic 2 tsp
  • Salt  1 tsp
  • Crushed black pepper 2 tsp

For Sauce:

  • Butter 2 ounce
  • Brown sugar 4 tbsp
  • Wooster sauce 3 tbsp
  • Mustard paste 1/2 tsp
  • Ketchup  1/4 cup
  • BBQ sauce  1/4 cup

Method:

  1. For making sauce, add butter, brown sugar, wooster sauce, mustard paste, ketchup, bbq sauce, garlic powder, chili sauce, chopped cinnamon, paprika, chopped red chilies, salt and black pepper cook until it becomes thick.
  2. Now add chicken wings, chopped garlic, salt and chopped black pepper, place it in pyrex dish bake it for 30 to 40 minutes on 180 degree C.
  3. Then pour sauce, green coriander and parsley for garnish then serve.

Ingredients For Handi Hotpot:

  • Rice  1/2 kg
  • Chicken Boneless breast  2
  • Mushrooms 4 sliced
  • Sweet corn  4 tbsp
  • Potatoes  as required
  • Carrot 1
  • Onion 1 cup
  • Green chilies 2
  • Coriander leaves 2 tbsp
  • Chili powder 1 1/2 tsp
  • Allspice  3/4 tsp
  • Salt 1 1/2 tsp
  • Coriander crushed 1 1/2 tsp
  • Cumin 1 tsp
  • Ginger garlic 1 tbsp
  • Tomato purees 2 tbsp
  • Oil 1/2 cup
  • Turmeric  1 tsp

Method:

  1. Take a bowl pour oil add chopped onions make it golden brown.
  2. Now add ginger garlic paste, turmeric, chopped cumin, chopped coriander, chopped red chilies and garam masala for frying.
  3. Then add tomato puree, chicken breast, mushroom slice, sweet corn, chopped and fried potato and boiled and chopped carrot fry it for 5 minutes.
  4. Now pour water, when water dries then add rice cover and let it cook till it tenders.
  5. Add green coriander and green chilies simmer it well mix and serve it.

Ingredients For Lemon Herbed Grilled Fish:

  • Boneless fish fillet 1/2 kg
  • Lemon juice 1 tbsp
  • Oil 2 tbsp
  • Garlic crushed 1 tsp
  • Parsley 1 tbsp
  • Salt  1/2 tsp
  • Black pepper 1/2 tsp
  • Paprika 1/2 tsp
  • Chili powder 1/2 tsp
  • Lemon slices  1 lemon

For Lemon Herb Sauce:

  • Garlic crushed 1 tsp
  • Chicken stock 1 cup
  • Lemon juice 2 tbsp
  • Parsley chopped 1 tbsp
  • Mixed herbs 1 tsp
  • Salt  1/2 tsp

Lemon Herb Sauce:

  • Black pepper 1/2 tsp
  • Cream 4 tbsp
  • Corn flour  1 tbsp

Method:

  1. First marinate the fish fillet with lemon juice, garlic, chopped parsley, salt, paprika and chopped red chilies.
  2. Now pour oil in a pan and take it out.
  3. For making herb sauce, pour oil add chopped garlic for frying.
  4. Then add chicken stock, lemon juice, chopped parsley, mixed herbs, salt, black pepper and cream boil and let it cook.
  5. The add corn flour make it thick.
  6. Now place the fish on platter pour lemon herb sauce while serving.
