Lemon Garlic Fish And Beijing Soup by Chef Gulzar

                                  LEMON GARLIC FISH
INGREDIENTS:
  • Boneless fish:         300 gm
  • Garlic paste:           1 tsp
  • All purpose flour:   1/2 cup
  • Egg Whites:            2
  • Oil:                         for fry
  • Salt:                        to taste
FOR LEMON SAUCE:
  • Chicken Cubes:      2
  • Garlic(sliced):        1 tbsp
  • Black Pepper:        1 tsp
  • Corn Flour:            2 tbsp
  • Lemon Juice:         1/2 cup
  • Brown Sugar:        2 tbsp
  • Ginger slices:        1 inch piece
  • Lemon:                  1
  • Oil:                        2 tbsp
  • Salt:                       to taste
METHOD:
FOR FISH PREPARATION:
  1. Apply salt on 300 gm fish, now in a mixing bowl stir 2 eggs and dip the fish in it and then coat the fish with 1/2 cup all purpose flour. Now Fry the fish by heating oil in a pan.
FOR MAKING LEMON SAUCE:
  1. Heat oil in a pan and fry 1 tsp garlic paste in it.
  2. Now add 2 tbsp brown sugar, 1 tsp black pepper, 1/2 cup lemon juice and salt in it and mix all together, now add 2 chicken cubes and water and cook it well.
  3. When its start to boiling then add 2 tbsp cornflour by mixing into water and mix it.
  4. Now add fried fish pieces in it, when sauce starts to get thicker turn off the stove.
  5. Serve with lemon and sliced ginger.

                     BEIJING SOUP

INGREDIENTS:
  • Beef Mince:                125 gm
  • Chicken Stock:           1-2 jug
  • Eggs:                           3-4
  • Chopped Onions:        3
  • Chopped Mushrooms: 1 Cup
  • Chopped Carrots:        1 cup
  • Chopped Ginger:         1 tsp 
  • Corn flour:                   1/2 cup
  • Soya Sauce:                 4 tbsp
  • Black Pepper:              1 tsp
  • Spring Onions:             2-3
  • Oil:                               2-3 tbsp
METHOD:
  1. Heat oil in a pan and fry 1 tsp ginger paste, now grill 125 gm beef mice in it.
  2. Now add 3 onions, 1 cup mushrooms, 1 cup carrots, 4 tbsp soya sauce, 1 tsp black pepper and 2-3 spring onion pieces in it.
  3. Then add 1-2 cup of chicken or beef stock and cook until boiled, now add 3-4 eggs in it and mix, now add cornflour in it and cook until its soup becomes thick.
  4. Serve with garnishing spring onions on it.
