Baked Chicken Spaghetti, Pistachio Coconut Pudding And Roomi Fish by Shireen Anwer

Ingredients for Roomi Fish:

  • Fish fillet 1/2 kg
  • Salt 1/2 tsp
  • Black pepper 1/2 tsp
  • Mustard powder 1/2 tsp
  • Lemon juice 1 tbsp

For Batter:

  • Flour 4 tbsp
  • Egg 1
  • Baking powder 1/2 tsp
  • Salt 1/4 tsp
  • White pepper 1/4 tsp
  • Mustard 1/4 tsp
  • Cheddar cheese 2 tbsp grated

Method:

  1. For making batter: Put flour, egg, baking powder, salt, white pepper, mustard and grated cheese in one bowl and mix them.
  2. Now marinate fish fillet with, salt, lemon juice, mustard powder, black pepper for 30 minutes.
  3. Then dip into batter and deep fry it in hot oil.
  4. In end, serve it with french fries or coleslaw salad

Ingredients for Baked Chicken Spaghetti:

  • Boneless chicken 1/2 kg Julian
  • Ginger garlic paste 1/2 tsp
  • Crushed red pepper 1 tsp
  • Crushed black pepper 1/2 tsp
  • All spice powder 1/2 tsp
  • Crushed cumin 1 tsp
  • Salt 1 tsp
  • Wooster sauce 1 tbsp
  • Lemon juice 1 tbsp
  • Butter 1 tbsp
  • Mushrooms 4 sliced
  • Spaghetti boiled 1/2 packet
  • Cheddar cheese grated 1 cup
  • Onion Chopped 4 tbsp
  • Capsicum  1 chopped
  • Green Chilies 4 chopped
  • Coriander leaves chopped
  • Baking powder
  • Oil

For Topping:

  • Eggs 2 beaten
  • Flour 2 tbsp
  • Garlic paste 1 tsp
  • Cream 1 cup
  • Milk 1/4 cup
  • Salt 1/2 tsp
  • Black pepper 1/2 tsp
  • Mustard powder 1/2 tsp
  • Crushed red pepper 1/2 tsp

Method:

  1. Firstly, marinate chicken with ginger garlic paste, chopped red chili chopped black pepper, all spice powder, chopped cumin, salt , wooster sauce and lemon juice for 30 minutes.
  2. Now melt butter in pan and stir fry marinated chicken for 5 minutes.
  3. Now add 4 mushroom slices and cook for 5 minutes.
  4. Then put grated cheese, chopped onion, capsicum, chopped green coriander, green chili and baking powder in a bowl.
  5. Now put chicken in this mixture, toast it and put this mixture in dish.
  6. Put beaten egg, flour, garlic paste, cream, milk, salt, black pepper, mustard powder and red chili powder in one bowl and mix . Then beat it until light and fluffy.
  7. Now put it on chicken, bake it on 180 degrees C for 30 minutes, till the topping is set.

Ingredients for Pistachio Coconut Pudding:

  • Bread 5 sliced
  • Milk 3 cups
  • Eggs 4
  • Golden syrup 2 tbsp
  • Sugar 3/4 cup
  • Canned coconut cream 1/2 cup
  • Pistachio chopped  4 tbsp
  • Butter 1 ounce
  • Flour 2 tbsp
  • Coconut essence 1/2 tsp

Method:

  1. Preheat the oven on 180 C.
  2. Now grease the square pyrex dish.
  3. Then put eggs, golden syrup, sugar, butter, bread slice, milk, coconut cream and flour in blender and blend it for 1 minute.
  4. Now add coconut essence and pistachio chopped in a pyrex dish and bake it for 45 minutes, until they turn to golen and become set. Then serve it as hot or cold.

  • Tried pudding. I made few changes, use 3 slices bread, 2 1/2 cups milk, 3/4 cup sugar. I dint have kulfa ball candies so I added 2 tbsp coconut, 2 tbsp milk powder. Baked for 40 mins at 325 F.Its a good recipe, PLZ TRY IT.
