Biscuit Cake, Spicy Chicken Bharta And Country Chinese Fish by Chef Zakir

Ingredients For Biscuit Cake:

  • Sooper biscuit 3 packets
  • Milk 1 liter
  • Egg yolk 4
  • Custard powder  3 tbsp
  • Vanilla essence  few drops
  • Sugar 250 gm
  • Butter  250 gm
  • Fresh cream 100 ml
  • Icing sugar  3 tbsp

Method:

  1. Grease the round mold with butter.
  2. Now paste the chopped biscuit on its sides and on its base.
  3. Pour milk, egg yolk.
  4. After that add custard powder, milk mix it well.
  5. Along sugar mix it well.
  6. Now add few drops of vanilla essence cook it thick.
  7. Remove the custard from stove for making it cool.
  8. Then spread the half quantity biscuit into mold.
  9. Now make another layer of remaining custard, leave it in fridge.
  10. For making batter cream icing take a bowl add butter, fresh cream and icing sugar beat it well.
  11. When the mixture becomes smooth then leave it to cool, then garnish and serve.

Ingredients For Spicy Chicken Bharta:

  • Chicken boneless 1/2 kg
  • Onion chopped 1
  • Tomato chopped 1
  • Egg boiled 2
  • Coriander leaves 1/4 bunch
  • All spice powder 1/2 tsp
  • Chili powder  1 tsp
  • Coriander powder 1 tbsp
  • Fenugreek leaves 1/2 tsp
  • Turmeric 1/2 tsp
  • Cumin powder 1 tsp
  • Salt  to taste
  • Ginger garlic paste 2 tbsp
  • Vinegar  2 tbsp
  • Oil 2-3 tbsp
  • Water  1 cup

Method:

  1. First make small pieces of chicken, add salt and vinegar keep it on a side.
  2. Now pour oil in a pan, add ginger garlic paste, cook it well.
  3. Then add chicken roast it.
  4. Now add turmeric, chopped red chilies, chopped cumin, chopped coriander, chopped garam masala, chopped coriander and chopped fenugreek cook it for 1 to 2 minutes.
  5. Then pour water cover and let it cook.
  6. Remove its cover for 12 to 15 minutes add chicken gravy then keep it on a side.
  7. Now add chicken into chopper and chop it.
  8. Then take a bowl, pour oil add onions and chopped tomatoes cook it well.
  9. When it is mixed well then add chicken mince mix it with masala gravy.
  10. Now add boiled egg yolk mix it again.
  11. When it becomes thick then take it out in platter.
  12. Add egg white and green coriander for garnishing then serve.

Ingredients For Country Chinese Fish:

  • Fish fillet 1/2 kg
  • Capsicum 1
  • Green chilies 3-4
  • Ginger 1
  • Carrot  1
  • Cloves 4
  • Egg  1
  • Tomato ketchup 4 tbsp
  • Flour 3-4 tbsp
  • Corn flour 2 tbsp
  • Worchester sauce 2 tbsp
  • Oyster sauce 2 tbsp
  • Whole red chilies 6-7
  • Black pepper powder  1/4 tsp
  • White pepper powder 1/4 tsp
  • Salt to taste
  • Oil  2 tbsp
  • Oil  for fry

Method:

  1. First add capsicum, green chilies and carrot cut it into small pieces.
  2. Now add fish cubes. Then add salt, black pepper, egg and flour for marination, pour oil in a pan deep fry it. Shallow fry it make it golden brown and keep it on a side.
  3. Now pour oil in a pan add chopped ginger and garlic fry till becomes golden brown.
  4. When it becomes golden brown then add chopped vegetables.
  5. Let it cook for 1 minute add tomato ketchup, worchester sauce, oyster sauce, add red chilies, salt, chopped black pepper, white pepper pour water.
  6. Now add corn flour mix it in water make then gracy thick.
  7. Then add fried fish mix it and serve it hot.
